What is a good recipe to make for company?

What would be a good meal to make for company that is a little on the healthy side and that children might like? I need to find one or two dishes or a meal menu that I can perfect and serve when we entertain friends with children.

I just got this off the Rachel Ray show this week, tried it and it was fantastic, healthy and tasty.

Seared Salmon With Wilted Citrus Spinach Dinner

ingredients:
1 grapefruit and zest, divided
2 oranges and zest, divided
1 cup slivered almonds, toasted
4 to 5 tablespoons extra-virgin olive oil (EVOO), divided
4 salmon filets (about 6 ounces each)
1 red onion, thinly sliced
1 tablespoon Dijon mustard
3 tablespoons white wine vinegar
Salt and black pepper
1 bag of spinach

preparation:
After zesting the grapefruit and oranges, slice the peel and pith off, cut fruit into slices and reserve.

Preheat a small skillet over medium heat to toast the slivered almonds.

Preheat a large skillet over medium-high heat with a two turns of the pan of EVOO, about 2 tablespoons. Season the fish filets with salt and pepper, and transfer to the hot skillet. Cook for 4-5 minutes on each side or until cooked to desired doneness.

Meanwhile, preheat another large skillet with two turns of the pan of EVOO, about 2 tablespoons, over medium heat. Add the red onion, the orange and grapefruit zest, mustard and white wine vinegar. Season with some salt and pepper. Just before you are ready to plate, add in the spinach and toss.

Divide the citrus spinach between your serving plates, top with the seared salmon and sprinkle with the toasted almonds. Garnish with grapefruit and orange slices.

Yields 4 servings

Vegetable Dish with veggie dip, cheese and cracker platter, main course baked chicken, wild rice, rolls.

My first rule of thumb is to make something for which I can do most of the prep work in advance because I've learned that that as long as I'm not stressed out and having a good time, everyone else will have fun no matter how awful my cooking is ;-) That said, casseroles are great and you can make them healthy, such as a veggie lasagna. Healthy pizzas and/or a taco bar are fun and easy as well. You can make the taco bar healthy by using ground turkey rather than ground beef, etc. If you go with the pizza option, have the crusts ready and then a bunch of toppings ready so that folks can make whatever they'd like. Easy clean up as well. Have fun!

GREEK-STYLE RAVIOLI

1- 1 1/2 bags cheese ravioli (24 oz. size)
1 can (28 oz.) can plain, diced tomatoes, drained
2 Tbsp. butter or margarine
1 tsp. minced garlic in water
1/2 c. chopped onion
1 Tbsp. dried parsley
1 tsp. dried basil
1 bag (10 oz.) fresh spinach, rinsed with big stems removed
1 c. pitted black olives, sliced
crumbled feta cheese as desired

Cook ravioli according to package directions. Drain. (Reserve pot).

While the ravioli is boiling, melt the butter in a deep, 12 inch skillet. Add the garlic and onion, and brown lightly. Add the tomatoes, parsley, basil, and spinach. Cook over low heat until the spinach is just wilted.

Carefully dump the ravioli back into the pot, adding the tomato/spinach mixture. Stir to mix well. PUt the heat under the pot on low for a few minutes if you feel the ravioli has cooled. Serve immediately topped with feta cheese and olives.


EASY CAESAR SALAD

1 bunch of green leaf lettuce
1 bottle Kraft Classic Caesar salad dressing
1/4 c. fresh-grated parmesan cheese
1/2 c. seasoned croutons
salt and fresh-ground pepper

Wash lettuce and tear into bite-size pieces. Place lettuce in a salad bowl, and pour in desired amount of salad dressing. Stir to coat. Add parmesan and croutons, and sprinkle with salt and pepper. Add additional parmesan and croutons, if desired. Serve immediately.

Spaghetti with Marinara and Meatballs:

1 can tomato sauce
1 can diced tomatos
1 carrot, chopped finely
1 celery stalk, chopped finely
1 onion, diced
2 cloves garlic, minced
3 T fresh basil
1 bay leaf
2 tsp dried Italian herbs
1/2 cup olive oil
1 T salt
1 tsp fresh ground pepper
1/4 tsp red pepper flakes

Saute onion, celery, and carrot in olive oil. Add garlic and saute until translucent. Add tomato sauce and diced tomatoes and dried herbs. Cook 10 minutes. Add salt, pepper, and red pepper flakes. Add fresh basil and bay leaf.
Simmer for 1 hour. Stir frequently.

Meatballs:

2 lbs very lean ground beef
1 T kosher salt
1 tsp ground pepper
2 cloves garlic, minced
2 eggs
1 cup Italian Bread Crumbs
1/2 cup Parmesan Cheese
1 block Mozarella cheese

Mix first 7 ingrediants and form into 1 1/2 inch balls. Cut mozarella into 1/4 inch cubes and stuff into each meatball, sealing meat around it. When finished, put meatballs in baking dish and top with some of the sauce. Bake for 1 hour or until cooked thru.

To serve, cook pasta and drain. Place pasta, sauce, meatballs and more sauce on plate. Top with shredded Italian cheese. Serve with salad and bread.
