i go to a massage school where there's hippies. one of the hippies is having a birthday on saturday. everybody is supposed to bring something like a potluck. since there hippies i need some healthy stuff. anybody have any ideas?

I have two recipes that I use all the time that are quick easy and everyone likes.
Pasta Salad
1 box tri colored pasta
1 bottle of low fat zesty italian salad dressing
You can dress this up any way you like. I generally use grated cheddar cheese, olives and diced peppers, onion and pepperoni. But you can add whatever you like. I have added pepperoncini, artichokes, substituted the pepperoni for chicken or shrimp. It depends on whatever them you want to go with. You can make it asian with bean sprouts, cucumber grated carrots, peanuts and an asian flavoured vinegarette. Make it greek with feta, grilled seafood and greek olives.
The second is a Mexican salad. It is dense, really filling and delicious! The key is it has to be served fresh, so you have to make all the components and mix it there.
2 bunches of romaine lettuce
2 - 3 diced tomatoes or packages of grape tomatoes halved
1 can of sliced olives
1 bag of baked tortilla chips
2 containers of sour cream (low fat is okay, but no fat doesn't taste that good)
1 large jar of salsa (I use medium heat, it is mellowed by the sour cream)
1 bag of shredded taco flavoured cheese
1 lb. of ground meat (Any type of ground meat is fine. I have had it with tofu, but I don't like tofu)
1 small onion
Taco seasoning
Sautee the onion and ground beef. I have plenty of spices in my cabinet. If you do this you will need to add 1 cup of water and about 2 tbsp. of water to simmer the meat with your seasonings. If not just buy a taco seasoning pack and follow the directions. It really is best if you rehead the meat if you make it the day before. The mix of the warm and cold is good. Crush the tortilla chips and mix everything else together. YUM!
Bring cups, or paper plates, or plastic forks. Or bottled water. Play it safe.
Fresh Basil and marinated mozzarella (in olive oil and sundried tomatos). Bring crusty bread too. Maybe an olive assortment. or Hummus!!!! Hummus is awesome. You'll need pita bread.
If they are pot smoking hippies, it doesn't have to be healthy. When the munchies kick in, they will eat anything. Bring something that you like, and if they don't eat it, you can bring it home.

soft tortilla shells, grated mozzarella cheese, chopped up jalapenos& green onion and cream cheese. mix it all together , slap on to the tortillas, roll them up, throw on a cookie sheet and into a oven pre. heated to 350 for 15 min. take out, let cool for 5 min, cut and serve with salsa

Pasta is always a safe bet. However, (and I rarely watch tv, but she caught my eye because she's so genuine and lovable) check out RachaelRay.com tv show, whatever. She has awesome recipes for any kind of party, no matter what kind of person you know; check her out. The one recipe she had the other day was awesome and cheap, for vegetarians or other, depending on what filling you chose.
Eggplant's pretty cheap. Slice it pretty thin, grill it if you can. Then lay a filling, either ricotta cheese or meat, whatever. Roll it up and bake in the oven for like 20 minutes. Top with cheese, sauce whatever. Either way, it's classy for no matter what the crowd. Check out her website for lots of fantastic, quick, easy recipes for whatever kind of crowd. And her salads are awesome.

Your continued reference to "hippies" makes me wonder if you're struggling with some prejudice! Either that, or its like taking a walk in yesteryear during the late 60's and 70's. Having been a "hippie" and still enjoying those roots, I can tell you that most of the time we ate well, were vegetarians, and thougtht that if it was "organic" then it had to be ok! So, you'll be pretty safe if you go with a nice salad or potato casserole. But, more importantly, you should know that many folks now eat meat and chicken! Here's a recipe for a spinach salad you might like to share:
1 package of baby spinach
1 4 oz package of crumbled feta cheese
1/2 cup candied walnuts
1 small container of mandarin oranges, drained
French Dressing
Make sure that the spinach has been cleaned and stemmed. Toss with cheese, walnuts, oranges and salad dressing. Enjoy!
Buy 5 containers of strawberries, two bunches of sweet seedless grapes and ten kiwi. Rinse under cold water.
In your Pretty Plastic Punch Bowl from Michael's or the grocer plate section.
Cut the heads of the strawberries, then cut them in half. Place in bowl with loose grapes off of the vine. Carefully peal the kiwi, with small a knife, then slice about 1/4 inch across. That way, you can see the pretty rings.
All in a Punch bowl and U R . . . . . . . . . . Good to GO!
