Wow what a cool idea...
Scatter the ground with some straw and have square bales of the stuff for your guests to sit on...
If real horses are not available you can make your own with material & dowels (patterns available but just draw the head free hand and add the mane out of yarn)
Then
at the end of the party have a drawing to see who wins the horses... if money is short could have an auction at about the middle of the party for the horses... they will love it.. trust me on this..

sounds like fun.... you can go all out and have the hay, ropes, horse shoes, country music..etc. you gonna have some horses too??!! =)

If you are going to have a themed party give the guest time to get a outfit together,Invite them adleast 3 weeks ahead of time.Sounds fun....
