Colored Divinity in Easter Colors is always a ***GO & Rememberable*** Thing to make at Easter time... the kids love it and so do the adults. Simple to make and very -very inexpensive.

RABBIT CAKE
Cake mix any flavor - Frosting any kind
When cooking cook in a 9x12 " cake pan.. make 2 cupcakes = one cup cake for the tail and one for the head... buy one pkg of twinkies. front paws... slice off two top corners of the cake for the ears of the rabbit. for the face cupcake cut off the bottom half... now place your *pieces together* and hold with tooth picks and frost away.

Can add coconut onto the top if desired

colored eggs are pretty easy and cute. You can make easter bread baskets...
1 package active dry yeast
1/2 cup milk
1/4 cup sugar
1/4 cup shortening
3 cups bread flour
1 egg slightly beaten
Shredded coconut
Green food coloring
Confectioners' Icing
Colored sugar or candy decorations
Soften yeast in 1/4 cup warm water (105-110 degrees). Heat milk, sugar, shortening, and 1 teaspoon salt till sugar dissolves; cool to lukewarm. Stir in 1 cup flour; beat smoth. Add softened yeasst and egg; beat well. Stir in enough remaining flour to make a saft dough. Knead on lightly flour ed surface till smooth and elastic (8-10 minutes). Place in greased bowl; turn once. Cover; let rise in warm place till double (about 1 hour). Punch dough down; divide into thirds. Cover; let rest 10 minutes.

Shape 1/3 of dough into 6 eggs; place close together in center of greeased baking sheet. For nest, shape remaining dough into two 26-inch ropes; twist together. Coil around eggs; seal ends. Cover; let raise in warm place till double (about 1 hour). Preheat oven to 350 degrees for about 20 min utes; bake for 15-20 minutes. Remove from sheet; cool.



Tint coconut with a few drops of green food coloring. Frost bread with Confectioners' Icing. Sprinkle eggs with colored sugars or candy decorations and nest with the coconut.

Tartlettes aux Framboises, Sauce Caramel aux Framboises~ Raspberry Tartletts

INGREDIENTS:
24 sweet tartlet shells
8 oz. mascarpone cheese (depending on how large your tart shells are)
zest from one lime + 1 teaspoon of lime juice
1/2 pint of fresh raspberries
FOR THE CARAMEL:
1 cup sugar
1/4 cup water
3 Tablespoons unsalted butter
8 oz. frozen raspberries, defrosted and at room temperature. Pureed in a food processor or blender

PREPARATION:
1. Mix the mascarpone cheese with the lime zest and 1 teaspoon of lime juice.

2. Fill the tarts with the lime cream.

3. Top each tartlette with 3/4 raspberries. (Depends on the size of the the refrigerator until ready to serve.

To make the raspberry caramel:
1. Put the sugar and water in a saucepan and place over medium low heat. Cook until the sugar dissolves.

2. Increase the heat to med-high and bring the sugar syrup to a boil. Simmer until it has a light golden color.

3. Whisk in the butter and the raspberry puree.

4. Simmer over medium heat until the mixture has thickend and will coat the back of a spoon.

5. Remove from heat and pour through a sieve. Allow to come to room temperature before using.

To serve:
Arrange the tarts on a plate. Drizzle the raspberry caramel over the tops. Serve any remaining caramel in a jug on the side.

Beautiful Baskets. Before the egg hunt can begin, all the little bunnies will need a container to collect their treasures. You can supply the materials for them to make their own custom-designed Easter baskets. Start collecting plastic pint-sized strawberry baskets now; these are the perfect size. You'll also need inexpensive colored ribbon or construction paper cut into strips, and a selection of pipe cleaners. Let the kids weave the ribbon and construction paper through the holes in the strawberry baskets, and then twist the ends of a pipe cleaner around opposite sides of the basket to form a handle. Put a small amount of Easter grass in the bottom of each basket to cushion the eggs.
Hunt Hints. The Easter egg hunt is one of the most anticipated events of the season. The only disappointing part about this occasion is that it's over so quickly! It doesn't need to be: this year, let the kids in on the fun of hiding the eggs, not just looking for them. Each child can take a turn hiding the eggs around the house or yard and let the rest of the children look for them. It's an activity that's guaranteed to keep the kids occupied for hours, and prolong the fun of the hunt.
Egg Alternatives. It can be unsafe to leave hard-cooked eggs unrefrigerated. Instead, try hollowing out your eggs before you dye them this year, or better yet, use plastic eggs stuffed with Easter treats. To make hollow eggs, poke small holes in the top and bottom of a raw egg. Poke a thin skewer or straw inside to break the yolk, hold the egg over a bowl, and then blow gently on the top hole until the raw egg drains into the bowl. Let the shells dry, and then decorate.
Feeding the Flock. All those hungry little hunters are going to need something besides candy to snack on. Simple refreshments like sandwiches and fruit are the perfect thing for a sunny afternoon. To be extra-festive, make thin sandwiches of peanut butter and jelly, ham and cheese or egg salad, and then use cookie cutters to make them into cute shapes like bunnies, lambs, chicks and eggs.
TABLE DECORATIONS
Turn a recycled white sheet into a spectacular Easter tablecloth by sponge painting bunnies, baskets and eggs in bright spring colors. Be sure to use textile paints so the tablecloth can be washed and used another year. Fabric paints are also available in squeeze applicators with glitter colors for decorating the sponged Easter eggs. Paint will need to dry at least 24 hours prior to use.

Make a festive napkin ring by threading a sewing needle with narrow elastic thread and stringing jelly beans onto it. You may need to put a little vegetable oil on the needle to help it slide threw the candy. Tie off the ends to form a circle and slide it over the rolled napkins for a cute way to dress up the table. Add a solid colored doily under the plates for a festive way to dress up the table.

You can serve creamy lemon pie or light strawberry custard, strawberry almond pastry or let the kids decorate personalized tulip cookies. The menu options are endless but I suggest you keep the choices light and festive. Tableware does not need to match but keep to a color theme of bright spring colors or soft pastels.

EASTER CRAFTS
Little girls love making their own Easter bonnets. Cut a large 12 1/2" circle out of heavy artist poster board using a compass as your guide. Attach a wide satin ribbon to the middle of the circle with hot glue, leaving long trailing tails to tie the bonnet on. Have lots of decorative options available for embellishing the hats. Kids can make flowers colored miniature cupcake baking cups or doilies. You can also use adhesive dots, paint, glitter, pleated paper ribbon, lace reminates or tulle to make decorate the bonnets.

Each child can make their own gingham Easter bunny or duck out of fabric, yarn and cotton batting or fiberfill. Have the shape of the animals pre-cut for the children and place the right sides of the fabric out. Let the kids stitch yarn around the edge of the shape leaving a 1" opening to stuff the cotton filling. An adult can blind stitch the hole closed and help glue on buttons for the eyes and pom-poms for the nose. Use pinking sheers to finish the edges.

ADULT EASTER ACTIVITY
Adults can also enjoy a Easter garden party. Invite friends to bring perennials for their gardens to exchange with other plants. Provide each guest with labels, paper bags or plastic nursery containers. Let them take home the same amount of plants that they brought getting an affordable start on beautiful blooms.

Dye your hard boiled eggs the night before, then place on your table in the morning. You can then use them for an egg salad, or to use in potato salad.
Cake-- dye some coconut green, and put it on your frosted cake and on the sides, use jelly beans to decorate it.
