Does anyone have a homemade cake recipe and an almond cookie recipe.?

I would like the cake to have almond extract in it. I would also like to have the almond cookies to be also from scratch. Thanks.

As for the almond cookies, I have a recipe that I make every Christmas to give as gifts (along with other cookies). I just corrected the recipe, but the changes might not show up for a day, so I'll tell you: where it calls for 1 cup stick butter, I mean 1 cup of butter, which is 2 sticks. Also, where it calls for nuts, they should be finely ground. These cookies are lovely, they are delicate and have such a delicious almond flavor. You don't really taste the pecans as being pecans, the almond flavor overpowers it. You could try using almonds, but I've found that it's harder to chop almonds than it is to chop pecans. I dont have one personally, but whenever Im looking for a new recipe I go to www.allrecipes.com. You can find pretty much anything on there, and it has reviews from other people who have tried them out.

I have made a cake from scratch and not only is it alot more work but not as moist and yummy as a cake mix cake. You could buy a Betty Crocker white cake mix and add a bit of almond extract to it. (They'll never know!)

This recipe is for little almond cakes, but they are easy to make and taste really good. You can frost them or just eat them with some coffee. I actually found it in the Williams-Sonoma Web site a while back and I loved it. I make it all the time for my guests.

5 Tbs. unsalted butter, at room temperature,
plus more for brushing
1 cup sifted confectioners sugar
1/4 cup plus 1 Tbs. sifted all-purpose flour
1/2 cup almond flour
2 egg whites



Preheat an oven to 425oF. Butter a 6-well silicone fluted tart mold and place on a baking sheet.

In a small saucepan over medium heat, melt the 5 Tbs. butter until it starts to brown and gives off a nutty aroma, about 3 minutes. Transfer to a small heatproof bowl and let cool.

In a bowl, whisk together the confectioners sugar, all-purpose flour and almond flour until combined. Add the egg whites and whisk until incorporated. Add the melted butter and whisk until smooth.

Divide the batter among the prepared wells and bake until the edges of the financiers are golden brown and the centers spring back when lightly touched, 15 to 20 minutes.

Immediately invert the mold onto a wire rack and remove the financiers, using a toothpick to gently loosen them, if needed. Let cool for 30 minutes before serving. Makes 6 little cakes.

Recipe for delicious almond cake:

1) Prepare everything you need to bake a cake.
2) Then when mixing the mixture add a spoonful of almonds in the batter.

Bake the cake. After it has a good shape with almonds inside, sprinkle a very small amount of 2 crushed almonds and sprinkle icing sugar. You can also decorate with icing. (YOUR OWN CHOICE)
