How much cheese?!


Question:

How much cheese?

How many pounds of cheese should I buy to serve 100 people on a cheese platter as an appetizer? There will be 6-8 other appetizers served for at most two hours. I'm not sure how many pounds I will need to cut up into cubes. Any ideas on what cheeses to serve would also be greatly appreciated. Thanks!

5 lbs
1 lb of each of the following
Colby Jack
Med Cheddar
Sharp Cheddar
Hot Pepper cheese
Muenster

Cut into small dice size squares and serve with tooth picks.

Is there beer at the party?

All you need is 5 pounds, cubed, and served with tooth picks. Most party goers only eat 3-5 cubes. make sure your cubes are smaller than a die.

I would suggest going to the store and ask their suggestions. I would say get 3-4 different types and they should range in consitency( soft, hard, spread etc) and also from animal (goat, cow,etc) I would suggest about 1 lbs of each type depending on of course what other things were being served and for how long the tray will be out.

3-4 pounds should do for about 100 people. I like a nice variety besides cheddar, swiss and jalapeno. Also keep in mind your budget. The big mega stores like Costco and Sams have cheeses already cubed but everyone can tell that is where they came from. You can still buy from those stores, but buy the blocks and cut from there. You might also have some other options besides the 'regulars.' For instance: Gouda, Munster, Extra Sharp Cheddar. Or do a blend of both the pre-cubed and the big blocks for variety.

What kind of cheese to serve:

English Cotswold- english cheddar w/garlic and herbs

Fromage'd Affinois-soft brie like cheese, better than 60% french brie

Old Amsterdam-Aged Holland Gouda, great caramelized flavor, creamy

Blue Castello-Soft buttery blue cheese, melts in your mouth

Danish Fontina-Semi-soft, creamy, slight tangy flavor

You may want to get a fig spread to pair with the blue cheese. I usually put strawberries, grapes and blueberries on platter to please the eye. Olives go great with cheese. Check out your local specialty grocery store. They tend to have better cheese selections than your basic grocery store.

The best way to cube your cheese is with cheese board that has a wire, if you don't have one cut the cheese while it is still cold. Always serve cheese at room temp. to bring out best flavor. 1lb should serve 10-12 people depending on size of cubes.

About 6 pounds by my calculation. You might want to break it down, like 2 pounds each of two types, and then one pound each of two others. 4 types total is a good variety, but for things like a basic cheddar you would still have more.
