What's the best recipe for roast beef and bake ham.?

I want to eat a roast beef I can sink my teeth in and I want it cook real good and I have the taste for down south dirty rice with some shrimp added to it. Tomorrow's Palm sunday and easter also so I wanna do something nice for my family and easter egg hunt. Show my kids friends and my family we have a bless day and a real cool time. Hi Peanut - Palm Sunday was last week but - For good roast beef I assume you have a rolled boneless joint. Season with salt and ground black pepper. Fry in hot oil until coloured all over - few minutes only. Put into hot roasting tin in preheated oven - 180 degrees celsius - for 15 minutes per pound plus 15 minutes for rare, 20/20 medium, 25/25 well done. At end of cooking time, remove from oven, cover with foil and leave to rest for 15 - 20 minutes. The joint will retain the heat and the juices will go back in to it and make it tender and succulent.

Sorry don't know about down south dirty rice but would love to learn!

the best tip for both is to cook them slowly covered with foil in the oven at about 300. This is so easy. Put it in the oven and forget about it for 3 or more hours depending on the size. No need to add water. For roast, I slice a fresh onion on top before the foil. About 45 minutes before you are ready to serve , remove the foil. For roast add vegetables of your choice and recover with foil. For ham , arrange pineapple rings and marachino cherries on top. You can use wooden toothpicks to hold them in place. Do not put the foil back on. Turn the oven up to about 375 until the ham is browned or the vegetables are soft for the roast. You are on your own with the shrimp and dirty rice. Sorry. I am from Alabama. Sounds like you may be from New Orleans.
