Here's one recipe:

Sausage Rotel Dip

10-12 servings
time to make 1 hour 30 min prep

1 lb bulk sausage
2 (8 ounce) packages cream cheese
1 can rotel, with liquid drained out

Brown sausage in skillet; drain excess grease.

Add cream cheese and cook over medium heat until melted.

Add Rotel and mix well.

Serve warm with chips.

Ingredients:
1 can Rotel tomatoes and chillies
1 box Velveeta cheese
splash milk
1 pound ground beef


Directions:

Cut cheese into squares, in microwaveable bowl. Add splash of milk. Microwave on 50% power to melt cheese. Stir. Add Rotel. Brown and drain ground beef and add to mixture. Heat in microwave until heated through.

* for a variation I sometimes add bulk sausage which adds a different flavor

Here is one you might like.
2 (8 oz.) cream cheese
1 can diced Rotel
1 jar of dried beef

Soften cream cheese at room temperature for about one hour, then blend smooth with a fork or wooden spoon. Chop dried beef and add to cream cheese. Stir in Rotel (juice included). Serve with tortilla chips.
