Recipes for a dessert tray?

I'm giving a large party for my husband's birthday and need help with the dessert tray (cake is already taken care of). The desserts need to be individual size, bake and freeze ahead, require no last minute decorating, and attractive. I have already made 6 dozen mini pecan pies. Brownies and or fudge would be nice but that would make the tray brown, browner and brownest. Lemon squares are so overdone in this part of the country they are no longer special. Ideas?

I do think something citrusy would be nice and would add some color. How about making the lemon bars minus the lemons and using orange or lime instead?

I would also do those little mini-vanilla wafer cheesecakes...recipe below...and dollop each top with canned cherry pie filling. Not only delish, but will add a little color to your dessert tray.

2 dozen vanilla wafers
4 packages (8 ounces each) cream cheese
1 cup granulated sugar
2 teaspoon vanilla
4 eggs

PREPARATION:
Heat oven to 325°.
Line muffin tin with foil liners. Place a vanilla wafer in each liner. In a mixing bowl, combine cream cheese, vanilla, and sugar; beat until well blended. Beat in eggs until blended.

Pour cream cheese mixture over wafers, filling each liner about 3/4-full. Bake for 25 minutes.

Top each with a dollop of cherry pie filling.

Another thing you could do would be individual baked mini-meringues and then drop a spoonful of store-bought lemon curd on top. Very tasty and very beautiful.

do cheese cakes also look into petit fours you can get them at bakery's or even at your local Sam's club an make sure you have them on clean mirrors they look 100 times more done up when you do that ...........you can get 6 mirror tiles at walmart for 9.00 or so

Go to a store like GFS and look in the freezer isle. They have tons and TONS of frozen pre made desserts. All you have to do is unfreeze them. They have stuff like mini cheesecakes, cookies, cream puffs, éclairs... and so on. That why you can get a great assortment of desserts with very little work. Good Luck!

May I suggest Chocolate covered strawberries? Use fresh (duh) berries with stems in tack and dip in a good quality chocolate. I use Ghirardelli 60% cacao bittersweet chocolate. Just break into small pieces and melt in a double boiler. Wash and pat dry your berries and dip...voila! Place onto a wax paper lined cookie sheet and refrigerate until set. They make a lovely presentation and are ohhhhhhh so good.

Also another favorite is sliced pears presented with clear honey and either shredded parmesan or asiago cheese. A combination you just can't beat. You do it or present the ingredients and let the guest do it themselves.

Fruit Pizza!!!! This is great tasting and very colorful. It's also really simple to do.

INGREDIENTS

* 1 (18 ounce) package refrigerated sugar cookie dough
* 1 (7 ounce) jar marshmallow creme
* 1 (8 ounce) package cream cheese, softened

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. On an ungreased medium baking sheet, smooth the refrigerated sugar cookie dough into a single layer approximately 1/4 inch thick. Bake in the preheated oven 10 minutes, or until edges are lightly browned and center is no longer doughy.
3. In a medium bowl, blend the marshmallow creme and cream cheese. Spread the mixture over the baked crust. Chill in the refrigerator until serving.


The final step is slicing the fruit of your choice and putting it on the pizza. I like using kiwi and strawberries - the colors just POP!

This recipe will yield 16 individual slices, so you may want to make 2 or 3 for a party.

SUGAR CREAM CAKE BARS
1 yellow cake mix
2 eggs
1 stick melted butter
mix together and press into greased glass bake pan
3 cups powdered sugar
2 eggs
1 bar soft cream cheese
mix together and pour over batter bake at 350 for 20 to 25 minutes or until golden brown and side of cake pull away from pan, let cool and slice into bars
CHEESE CAKE
1 box graham cracker crumbs
1 stick melted butter
1/2 cup sugar
mix together, press a Tablespoon into cupcake papers press down.
1 bar soft cream cheese
1 cup powdered sugar
1 tub whip cream
mix together, spoon a couple Tablespoons on top of crust.
top with your favorite pie filling or do a mixture of several kinds. chill
ROOT BEER FLOAT CUPCAKES
1 white cake mix
3 eggs
1 cup crushed hard root beer candy
make cake mix all directed substitute root beer for water
bake in cup cake papers for icing
1 box powdered whip cream {like dream whip}
2/3 cup crushed hard root beer candy
make like box says but substitute root beer for milk
