Question: Have any low-cal snack ideas for my book club!? Seems that everyone is dieting which makes it difficult to be
hospitable when the group meets!. I've done the fruit salads, Italian Ices!. I hate diet foods so please don't suggest anything with artificial sweetners!. Just looking for something good and not too heavy on calories with a bit of flavor to serve my guests!.Www@FoodAQ@Com

You can make a jelly roll, and fill it with non-fat Cool Whip and sliced strawberries or fresh raspberries!.!.!. or just serve Cool Whip and the berries over sliced Angel Food cake (but the jelly rolls look pretty sliced on a platter) !.!.!.!.!.!.!.Fresh salsa with BAKED tortilla chips !.!.!.!. Veggie / dip platters, using unusual veggies (jicama, snow peas, fresh green beans, sliced summer squash, daikon, radish roses) !.!.!. Wraps, using romaine lettuce (instead of bread) with Dijon mustard and thin slices of turkey / cheese; roll up and secure with toothpicks !.!.!.!. Stuffed cherry tomatoes (hollow out and fill with chicken salad, or whatever)Www@FoodAQ@Com

Annie's Fruit Salsa and Cinnamon Chips -- OMG GOOD!!!



INGREDIENTS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar



DIRECTIONS
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves!. Cover and chill in the refrigerator at least 15 minutes!.
Preheat oven to 350 degrees F (175 degrees C)!.
Coat one side of each flour tortilla with butter flavored cooking spray!. Cut into wedges and arrange in a single layer on a large baking sheet!. Sprinkle wedges with desired amount of cinnamon sugar!. Spray again with cooking spray!.
Bake in the preheated oven 8 to 10 minutes!. Repeat with any remaining tortilla wedges!. Allow to cool approximately 15 minutes!. Serve with chilled fruit mixture!.

Banana Crumb Muffins -- 5 STAR AWESOME!!

INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter



DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C)!. Lightly grease 10 muffin cups, or line with muffin papers!.
In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt!. In another bowl, beat together bananas, sugar, egg and melted butter!. Stir the banana mixture into the flour mixture just until moistened!. Spoon batter into prepared muffin cups!.
In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon!. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal!. Sprinkle topping over muffins!.
Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean!.

Downeast Maine Pumpkin Bread --- WOW!!!


INGREDIENTS
1 (15 ounce) can pumpkin puree
4 eggs
1 cup vegetable oil
2/3 cup water
3 cups white sugar
3 1/2 cups all-purpose flour
2 teaspoons baking soda
1 1/2 teaspoons salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger



DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C)!. Grease and flour three 7x3 inch loaf pans!.
In a large bowl, mix together pumpkin puree, eggs, oil, water and sugar until well blended!. In a separate bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, cloves and ginger!. Stir the dry ingredients into the pumpkin mixture until just blended!. Pour into the prepared pans!.
Bake for about 50 minutes in the preheated oven!. Loaves are done when toothpick inserted in center comes out clean!.

Everyone loves dips and i find this one is great!. Get a tub of low fat cottage cheese and add coriander to taste!. Season with salt and pepper and puree!. (or you can just mash) Then add a tin of tuna!. For a smoother dip puree again when the tuna has been added!. It can be served with carrot sticks or celery for those on a diet or with bread sticks or crackers for those who aren't!. Www@FoodAQ@Com

This is my favorite!.
Buy one of those loaves of Cocktail Rye or Cocktail Sourdough bread!.
You will find it by the deli section of a store!. They are the tiny slices!.
Spread a thin layer of cream cheese, low calorie spreadable any flavor
Take a firm smaller size cucumber!. Wash!. Now take a fork, turn fork over and drag it down all sides from top to bottom!. You will actually press the outer skin into the flesh!.
Slice a few thin slices and arrange on Cream Cheese!. Sprinkle with dried dill weed!.
These are great!. Only 10 calories each, I think!. Really low and really tasty!. Your friends will be impressed! Actually, the only calories is the slice of little bread!.Www@FoodAQ@Com
