Having a first communion party at my house - any suggestions for food?

We are probably having about 30-40 people. I really don't want to cater - want to cook myself - but need stuff that can get ready in a hurry. Any good recipes, etc?

mini cheese cakes (make on large cheese cake and freeze it then cut it into small rectangles)
mini eclairs
mini brownies

nachos, chicken, a pig perhaps

keep it simple. Make rigatoni, lots of it. Get chicken from a store, easy to heat and serve. Vegetables and bread. You have enough to worry about - enjoy the day

Definetely I would do a buffet.....
Do a ham !!! That is easy to prepare before hand and you don't have to worry about the meat.
And prepare salads...all kinds of salads like pasta salads, potatoe salads, green salads, tomato-mozzarella-basil, breads,
You could also prepare a roast the day before and heat it up in the oven and then thinly slice it....or... what I also like is... buy some roast beef cold cuts (regular slices) put a dab of mayo on the them and roll an asperagus spear (out of the can) up in it and present those rolls on a platter...always looks so nice and is yummy...

make a few crock pot items ,like a chili cheese dip ,and bbq this way it can be in warm and safe till your ready,the rest can be finger foods,like chips ,cheese,and meat trays,buy at deli dips with veggies, fruits on a tray with this dip( 1lg jar marshmellow fluff and 1 lg pkg cream cheese mixed) strawberries,grapes,what ever you like make ahead and then lay it out buffett style ,with a good punch and canned soda and a jug of home made tea, punch can be this one its really good and bottle of lemon lime soda and a ctn of lime sherbit ,,or orange ,what ever combo its all good !!easy easy

We are having one too. Our menu is BBQ sandwhiches requested by my son. I also will have hotdogs available if the little kids want them instead. Pasta salad, chip and dip, cut-out cookies, may skip the cake, maybe cupcakes, Fruit Salad, and drinks. All can come out of the fridge when we come home. Nothing too big or messy.

If you are getting home around "brunch-time", like we did after our children's communion...
We did scrambled eggs, with bagels and lox.
With a couple of large frying pans, doing a lot of eggs at once is very quick and easy. Especially if there's a grandmom around who wants to help out!
The bagels you can order ahead, pre-cut, and pick up on your way home. Usually the bagel shop would have the lox & cream cheese, or get it the day before at grocery store.
Also, get some fresh fruit, pre-cut melons, grapes, etc...and some sliced cheeses.
Instead of Lox, you could also get cold-cuts like ham, turkey, etc., light and goes well with the bagels and eggs.
Guests would have the choice of eggs with bagels or sandwiches with the lunchmeat & cheese on a bagel.
Good luck! Remember, your guests are there to enjoy your family and celebrate your child...relax and have fun and everyone else will also!

you can do sloppy Jo's, BBQ pork or beef sandwiches. you can make ahead and put in a crock pot then let them serve them selves
do cook out food like hamburgers, hot dogs or brats, it feeds alot but doesn't cost too much. you can have potato, or macaroni salad, bake beans.
you could do just a cold meat tray with ham, turkey and roast beef sliced thin and laid neatly on a tray with a variety of cheeses and breads.
if you want to do a sit down meal do a large lasagna , tossed salad, garlic bread

30-40 people is somewhat a crowd, a crowd you wanna feed with a buffet, so here you have some suggestions:
1. Prepare food 1 day ahead, the very day you will only have to serve it and you will be able to be the perfect hostess
2. Have a 2-3 people to help you out, one in the kitchen and one serving drinks... and a 3rd one serving in between, trust me, you will need help
3. If you have danish pastry stuffed with many casserole dishes you will only have to warm them in the oven and they taste great cold too.(the fillings can be chilli, fajitas, roasted chicken, vegetarian, spinach with gorgonzola, jam, bacon, pineapple and cheese, etc.)
4. A couple salads: 1 sweet and 1 salty to please everyone
5. You can have a full table of desserts and treats
6. If you are a great cook you can serve Paella, it will full everybody and you will get rave reviews
7. Both red & white wines will be welcomed
8. You can also serve tamales, which happen to be common in Mexican first communions: reds (chicken with red salsa), greens (pork with green salsa) oaxaquenos (chicken with mole) and strawberry and pineapple for the sweet tooth. They are served with atole (thicker than your eggnog) and there, you are all done!.
