theres the skin then theres the the stuff under the skin!.

The "stuff" inside the banana peel is called the flesh!. It forms there when the banana is growing on the tree!.

To be technical, the peel is called the epidermis, the flesh inside is called the parenchyma tissue, and those stringy things that cling to the flesh are called the fibrovasular bundlesWww@FoodAQ@Com

Its just the protective thick layer of the skin!. Thats how it grows!.
Most fruits have them!. Citrus especially!. You can see it in oranges and lemons!. Any thick-skinned fruits, the thick part is the pith!.
