In America, "goulash" is a beef stew which actually comes closer to what Hungarians call "p?rk?lt":

Sauté a chopped onion in your choice of fat (oil, lard, bacon drippings) until glossy. Remove from heat while you stir in 1/4 cup Hungarian sweet paprika and a pinch of caraway seed. Add about two pounds beef, cut into cubes, and some salt. Cover and return to medium-low heat. Cook slowly, stirring occasionally, adding water or broth if absolutely necessary (a tablespoon at a time) to keep from scorching -- but the meat should produce plenty of its own liquid. Serve over egg noodles or "nokedli" with cucumber salad on the side.
