Summer pot luck Help ?????!


Question: Summer pot luck Help !?!?!?!?!?
We are having a pot luck this Sun!. at the park!. Any suggestions on a easy recipe!. I am sick of taking chicken salad!. I know one of the guys always brings a few tubs of KFC!. Other than that no one seems to take a main dish!. so needs to be a main course, simple (or not hours in kitchen on Sat), no power (park), I can use a crock pot in am though and take to park just before hand!. how about sloppy joes in the crock pot or shredded turkey on hamburger buns
or maybe make a bunch of taco meat and have tacos with all the fixins!
or else a few large sub sandwiches cut into smaller chunks

can of drained pinto or chili beans

Antipasto Salad


4 oz!. hard salami, diced
1 cup mushrooms, sliced
1 small red onion, thinly sliced
1 cup pitted olives, halved
? cup Italian salad dressing

8 oz!. pasta of choice

1 cup cherry tomatoes, halved
? cup green peppers, diced
1 cup celery, diced
1 Tbsp!. vegetable oil
1 tsp!. salt
? tsp!. black pepper


1!. Place salami, onions, olives and mushrooms in a large bowl!.
2!. Add Italian dressing, cover and refrigerate at least 3 hours!.
3!. Cook pasta, according to package directions, 1 hour before serving; drain well!.
4!. Add pasta, celery, tomatoes, green peppers, vegetable oil, salt and pepper to marinated salami mixture; toss to mix!.
5!. Cover, return to refrigerator for at least 30 minutes before serving!.


Makes 10 servings


Black Beans and Corn Salad

2 cans black beans, drained and rinsed
1 can whole kernel corn, drained
1 can tomato bits
1/4 tsp!. garlic powder
1/4 tsp!. chili powder or cumin
2 Tbsp!. sweet pickle relish (optional)
1/8 tsp!. cayenne or red pepper
1/2 cup onion, chopped


1!. Drain and rinse black beans along with corn!.

2!. Combine black beans, corn, tomato bits, and relish in a large bowl!.

3!. Add garlic powder, cayenne pepper, cumin and onion flakes!.

4!. Stir all ingredients until well mixed!.

5!. Cover and refrigerate or serve immediately!.


Pasta and Broccoli

? lb!. (8 oz!.) pasta, uncooked
1 package (10 oz!.) frozen chopped broccoli
4 cups water
1 teaspoon salt
2 tablespoons olive oil
1 teaspoon of minced garlic or garlic juice

1!. Place water with salt added in a large pot and bring to a boil

2!. Add broccoli and cook for five minutes!.

3!. Add pasta and continue boiling for 12 minutes more!.

4!. Add olive oil and garlic; stirring thoroughly!.

5!. Serve hot or cold!.


Green Bean & Corn Medley

2 Tbsp!. butter or margarine
1 onion, quartered and sliced thin
? cup green pepper, chopped
1 can sliced mushrooms, drained
1 can French style green beans, drained
1 can whole kernel corn, drained
Salt and pepper to taste

1!. Melt butter in a large skillet over medium heat!.
2!. Sauté onions, mushrooms and green pepper until tender
but not brown; stirring occasionally!.
3!. Add green beans, corn along with salt and black pepper
to taste; stirring to combine
4!. Cover, reduce heat, and simmer until beans and corn are
thoroughly heated!.


Cheesy Broccoli Bake


1 pkg!. frozen whole or chopped broccoli, thawed
1 small can mushrooms, drained
1 small onion, diced
? cup celery, chopped
2 Tbsp!. olive oil
1 can cream of mushroom soup
? cup water (or milk)
? tsp!. garlic powder
? tsp!. black pepper
? tsp!. salt or less
1 cup cheddar cheese, shredded
Cooking spray

1!. Preheat oven to 350 degrees F!.
2!. Coat a 2-quart baking dish with cooking spray!.
3!. Heat olive oil a skillet and sauté onions celery, as well as mushrooms over medium heat for 5 minutes or until tender but not browned!.
4!. Combine drained sautéed vegetables with broccoli in baking dish!.
5!. Pour cream of mushroom soup mixed with water (or milk) over broccoli mixture and add seasonings!.
6!. Cover and bake for 20 to 25 minutes or until thoroughly heated!.
7!. Sprinkle shredded cheddar cheese on top and continue to bake, uncovered, for 5 minutes more or until cheese is melted!.
