1. Everything in large bowls or on platters
2. Served on a plate
3. Head of the table serves self first then passes to his right. that person must receive plate with right hand..and pass along with the left hand..
4. Everything self served away from the table.

Family style is when the food is served on bowls and platters and a table helps themselves.

Plate service is when the food arrives to each diner on a plate.

Head of table service is when the head of the table serves everyone from his/her seat.

Buffet means the food in in a long on hot tables and people walk up to the line and serve themselves

It looks like you are refferring to the table settings, The back of Home and Gardens cook book has a full discription and illustration along with proper occasions for each setting, mine is an older version so I'm not sure if they still do or not but you may want to check their website Good luck

Family service: Main courses plated and with vegetables, placed in multi-portion dishes on tables for customers to help themselves. Any sauces are usually offered.

Plated/American: Service of pre-plated foods to customers, widely used in many establishments and in banqueting.

Head of tableservice: never heard of this one, maybe you're referring to Butler/French.

Buffet/Russian: Guests serve themselves from a variety of dishes set out on a table or sideboard. Items may be hot or cold.

Family Style: served in arge containers on the table with each person serving themselves.

Plate Service: The plate is served to you complete with the meal.

Head of Table Service: The head of the table is the first to be served followed by the guests.

Buffet: The food is lined up on a table or tables and there is a procession line in which each invidual serves himself.
