Any good Cinco de Mayo DESSERT ideas?

Planning a Mexican Fiesta luncheon, but not sure what to serve as a dessert? Main menu will be a make your own Nachos.
I know Flan is standard, but any other ideas? Cakes or cookies? Something that is easy to pick up and eat.


Answers:
The easiest...a sheet cake decorated like the Mexican flag, red, white and green. Half sheet feeds 15 to 20 people.

Mexican sweet bread (pan dulce), tres leches cake. and try this Mexican Hot Chocolate recipe called Champurrado.

Frozen Cinco De Mayo Dessert


61 NILLA Wafers, divided
1 cup BAKER'S ANGEL FLAKE Coconut, toasted
1/2 cup PLANTERS Almonds, toasted, finely chopped
1/2 cup (1 stick) butter or margarine, melted
1 qt. (4 cups) lime sherbet, softened
1 qt. (4 cups) orange sherbet, softened
1 qt. (4 cups) raspberry sherbet, softened



PREHEAT oven to 350°F. Finely crush 37 of the wafers. Mix wafer crumbs, coconut, almonds and butter until well blended. Press firmly onto bottom of 13x9-inch baking pan. Bake 8 to 10 min. or until lightly browned; cool.
SPREAD layers of each of the different flavored sherbets over cooled crust, freezing each layer until firm before topping with the next layer.
FREEZE at least 4 hours. Remove from freezer about 10 min. before serving; let stand at room temperature to soften slightly. Cut into 24 squares. Top each with 1 of the remaining 24 wafers just before serving. Store any leftover dessert in freezer.

Tres-Color Flag Dessert

1 pkg. (4-serving size) JELL-O Brand Lemon Flavor Gelatin
1 pkg. (4-serving size) JELL-O Brand Lime Flavor Gelatin
1 pkg. (4-serving size) JELL-O Brand Cherry Flavor Gelatin
3 cups boiling water, divided
3 cups cold water, divided
1-1/2 cups BREAKSTONE'S or KNUDSEN Sour Cream, divided



PREPARE each flavor dry gelatin mix in separate bowl as directed on package, using 1 cup of the boiling water and 1 cup of the cold water for each flavor of gelatin. Refrigerate 4 hours or until set.
SPOON lime gelatin into blender container. Add 1/2 cup of the sour cream; cover. Blend well. Pour into 12 dessert dishes. Repeat with remaining gelatin flavors and remaining sour cream, layering lemon gelatin and then cherry gelatin over lime layers in dishes. (Colors of desserts will resemble the colors of the Mexican flag.)
SERVE immediately or refrigerate until ready to serve. Store leftover desserts in refrigerator.

Layered Dulce de Leche Dessert


40 NILLA Wafers, divided
1-1/4 cups cold milk
2 pkg. (4-serving size each) JELL-O White Chocolate Flavor Instant Pudding & Pie Filling
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed
1/4 cup KRAFT Caramel Topping



CHOP 4 of the wafers; set aside. Line 9x5-inch loaf pan with foil, with ends of foil extending over sides of pan. Arrange 12 of the remaining wafers in single layer on bottom of prepared pan; set aside.
POUR milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. (Mixture will be thick.) Gently stir in the whipped topping. Spoon one third of the pudding mixture over wafers in pan; top with 12 of the remaining wafers and 2 Tbsp. of the caramel topping. Repeat layers of pudding mixture, wafers and caramel topping. Cover with the remaining pudding mixture. Sprinkle with chopped wafers; press wafers gently into pudding mixture.
FREEZE 4 hours or until firm. Lift dessert from pan, using foil handles; remove foil. Place dessert on serving plate. Let stand 15 min. to soften slightly before cutting into 12 slices to serve. Store leftover dessert in freezer.

INGREDIENTS
6 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 cups lard (or shortening)
1 1/2 cups white sugar
2 teaspoons anise seed
2 eggs
1/4 cup brandy
1/4 cup white sugar
1 tablespoon ground cinnamon
DIRECTIONS
Preheat the oven to 350 degrees F (175 degrees C). Sift the flour, baking powder and salt into a bowl, and set aside.
In a large bowl, cream together the lard and 1 1/2 cups sugar until smooth. Mix in the anise seed, and beat until fluffy. Stir in the eggs one at a time. Add the sifted ingredients and brandy, and stir until well blended.
On a floured surface, roll the dough out to 1/2 or 1/4 inch thickness, and cut into desired shapes using cookie cutters. The traditional is fleur-de-lis. Place cookies onto baking sheets. Mix together the 1/4 cup of sugar and cinnamon; sprinkle over the tops of the cookies.
Bake for 10 minutes in the preheated oven, or until the bottoms are lightly browned.

How about flan?

1 cup sugar, caramelized for the pan
6-10 eggs, well beaten
2 (14 ounce) cans sweetened condensed milk
2 (12 ounce) cans evaporated milk
1 teaspoon vanilla
1 dash cinnamon

PREPARATION
-Put sugar in bake pan, place pan in fire until ugar is melted, allow to harden, then place pan in container with ice cold water until the caramelized sugar cracks.
-Mix other ingredient in order, stir well and pour in mold.
-Place mold in pan with 2" hot water in preheated oven.
-Bake at 350°F for 1 hour or until firm.
-Let cool, then invert & unmold.
-Decorate if desired with some sliced strawberries.

Yes flan is standard.

You could do a variation on it...chocolate flan when made well is delicious

Or tres leches cake...i like it even if it isn't the best cinco de mayo idea

There are some good kinds of cookies men and women from Mexico make. You may want to search for Mexican cookies online. I know what they are, the different kinds, but I forget what they are called.

Cookies are portable.

You can't throw a Mexican party without CORONAS.....lol....they're from Mexico.

Make your own - Fruit tacos:

Get flour tortillas, a randon sampling of fruits, whipped cream or sweetened crema with honey, caramel and chololate to drizzle over top.

Make it buffet style. All you do is ready the tortillas - warm and sprinkle with sugar.

My family loves them!

Churros.

Rice pudding or tapioca.

Go to a mexican grocery store and get some of their candies. Or there dessert bakery goods ie: a concha = rolled bread with sugary topping.
