Best way to have colored foods is to use Food Coloring, it is not only safe but it is a great way to add color to almost any dish. blue apple sauce, deviled eggs, drinks, whatever you can think of......
just put blue food coloring in every thing and hope it works should have chosen green easier to dye every thing

When i was little i went to a party where the mom had put blue food coloring in mashed potatoes. Which makes me think that you could make mashed potatoes with blue food coloring and then turn them into fried potato cakes.
There was also blue pizza...homemade pizza dough with blue food coloring.
