I have worked in many catering jobs and we always catered for 75% of people that were attending. There was usually food left over as well. Many catering companies will not let you take the food home anymore either, stupid and PC as it it, as some people have been known to leave the food they take lying out at night especially when they've had a boatload of beer, instead of refrigerating it and then complaining they have got food poisoning when they eat it a couple of days later. Some catering firms have actually been prosecuted.

At my sister's wedding though there was alot of wastage. Remember to ask the caterer for any leftovers to take home. With all the excitement alot of people do not do this.

Aim high and be prepared for "wastage". A professional catering firm would be a good bet.

cater for an additional 10%. In the industry's norm, your caterer himself would be providing for an extra 10 per cent. so u should be fine!

Well lets start by saying that I plan weddings and events and the food is where they get you, that and the bar.........carefull.
Are you having apps? if so remember everyone is on a diet so you need veg trays but they never stick to them at an event. Fruit trays are usually well visited. Although most like to book for 20% over I would wind in and go exact, you can also ask what happens if you run out? can the caterer produce food on the fly at teh same cost? If this is the case shoot under by 20%, for a sit down meal go exact, I think I have seen 1 event that we needed more food and it was for the band anyway, we could have few them pb&js. Having a bar? BEer and wine and preselect the types of liquor you will have, (brands) no crown, no absolute, just go middle of the road, if someone has the nerve to complain you didnt want them there is the first place. I have many menus from weddings both cater app events and full meal extravioganzas.

People tend to take less when they see the food getting low. I would not do more then 250 servings. Believe me you will have leftovers and cant keep them. Health issue.

If it is a buffet which i presume it is if it is day or evening i would work out if they have had lunch or dinner and if they will be drinking this can have quite a significant effect on how much your guests will eat. I would say cater for 180 and you should have plenty and if in the evening remember people always go back if they have had a drink so would up to 200.

If you KNOW there are 250 people, why wouldn't cater for 250?

never cater for the 250 because some may not turn up and some may not eat much. I'd cater for 200.
My sis catered for 100 at her wedding reception and 150 came but there was still loads of food left.

Do you mean, you have invited 250 but don't know how many are actually coming?

Don't plan the food until you have a firm list. Then you cater for the number of persons with confirmed reply's.

I think that you should cater for 200, s you don't want there to be a lot of wastage

i would do 200. the only time you should ever have more servings then people is when its an a la carte seated party. otherwise people eat what they want and nit-pick
