You leave the question rather open, gender/location/how many people?

If mature enough, you can't go wrong with moderate amount of alcohol (coolers for the ladies and beer for the guys, wine for the sophisticated). 7-layer dips for tortilla chips are good, brownies are good. You can find the recipes anywhere online. Pizza dinner can't go wrong. Everybody loves ice cream cake.

If it's a house party during the summer, having a BBQ is pretty kickass. Depends on the crowd, you can have board games or team sports or video games or karaoke. Plan gags on the birthday boy/girl. If the kids are "too cool", get a good selection of music, dim the lights and they'll figure out what to do.

Themed parties are tricky. Too much work for the guests. I would suggest stay clear unless everyone's good with it.

Music is crucial. Find out what they like and get a large selection of it and make sure it doesn't run out. Same goes for alcohol.

lots of pizza,2 kegs of cold beer, music and a couple dozen hookers and you will not have any dull moments!!!!!

Hawiian Parties are always fun!

Hawaiian theme...my friend did this, and its really cute..specially if u get a nice day outside...
People wear hawaiian shirts...and the girls can have those cute skirts on...get a keg..., turn on the beachy songs..and enjoy.

a hispanic party sounds fun!

attire: casual-formal and latin/spanish inspired. girls should be stylish and sexy... preferrably dressed in bright coloured cocktail dresses, hair done nicely, wear dangly earrings that attract attention, and have their nails manicured. guys should wear pressed pants (jeans is ok too), dress shirt, and a blazer if it looks good; but no tie is necessary. everybody should be well dressed and have something on that reminds them of a "latin look"

food: spanish tapas. tapas is basically a table of "small samples"--it may look like 5 courses of big snacks to you but i had tapas one christmas and mannn i was full... and the food was AWESOME. start with fresh bread out the oven with an assortment of pesto and marinaded vegetables (olives, sundried tomatoes, mushrooms, artichokes), a sample platter of cold cuts (cold meat and cheese), a pot of steamed mussels in gravy, then seafood paella or some mediterranean grilled meat. be sure you're stocked up with wine or port throughout the meal--you'll need it! finish off with a dessert (all i could think of now is churros but that's probly gonna be too heavy after that meal) and a plentiful supply of hot tea and coffee

fun: if you want to bring out the child in you, you're never too old to have a pinata at your party. but in any case, be sure your DJ has a vast collection of latin records and have everybody stand up for salsa when they're finished eating (also a great way to burn off all those cals!). for extra fun, you can have one of your friends who are good with dances to teach some latin-style circle dancing (2 circles are formed: guys on the outside, girls on the inside... guy and girl dance one sequence of moves together then the girls move to their right to switch partners and they dance another rotation with their new partner and so on)
