Catering advise please?!


Question:

Catering advise please?

I have been asked to cater for a party of 50 (16 of them children). Amongst the gathering are vegetarians/vegans and coeliacs!! I am on a tight budget - any ideas of what I should think about preparing? Also my cooking skills are not top notch, so it needs to be simple - or preprepared if possible.

I dont propose that each item is suitable for all. But need a range of food that would allow something for everyone. Oh this is going to be tough!!

So no gluten, meat or animal by-products. Hmmmm.

How about veggie wraps and a fruit tray?

Beyond that, I don't have a clue, but I'm eagerly looking forward to reading what others have to say.

I AM DOING THE SAME! salads are alright for coeliacs also meats, vegi quiche, ham quiche, rather than sandwiches which are boring do open rolls with cream cheese with toms cu, tuna , mayo, egg etc. Then sausages, vege sausages, sausage rolls, cheese rolls, simosas, onion rings,
bahjis etc, crips, chocolate fingers they should all be happy, but do think are knives and forks needed! if you do coleslaw/rice/pasta they will be needed!

Veggie and fruit trays. Maybe a light pasta with butter for hot food. Browned butter and Mizithra Cheese is a great meal without meat!

TRY ADDING FRUIT KEBABS TO THE LIST AND SALAD/VEG TYPE KEBABS

Not sure about the coeliacs, you'd ahve to search for gluten free wraps, but otherwise you could do wraps with a range of fillings, some meat, chicken and a sauce for example, some tuna, some veggie, some beans. Have a look in M&S food hall for ideas of combinations. You just need to make sure they're not too dry. Tuck in both ends, roll up and then cut in half. I reckon that you need 2 each, plus some crudites and dips and you'll be fine.

All the ideas so far are good but what ever you choose to serve take time and make small signs for your layout, maybe suggesting vegan friendly, gluten friendly, etc and place them by those items so you won't spend half the party pointing out what's what...i suggest using maybe business cards size labels. hope this helps

I like to make a chick-pea dip (similar to hummus but without the tahini). It's good served with wedges of pita bread and sliced fresh veggies (red, green and yellow bell peppers, broccoli, zucchini, carrots, celery, etc.). You could buy hummus already made if you don't want make this--but it's so easy and a lot cheaper to make it yourself.

Drain two cans of garbanzo beans (also known as chick-peas) and place the beans in a food processor. Add two cloves of mashed garlic, 1/4 cup olive oil, juice from one lemon, and a bunch of fresh parsley, chopped. (The Italian flat parsley is better, but the curly leafed also works.) Process until almost smooth, adding a little water if necessary. Add salt and pepper to taste.

In addition, serve plenty of fresh fruit, cheese and crackers, etc. People will know what things they eat and avoid those they don't.
