A taco bar (beef, hard shell and soft shell, lettuce, tomatoes, cheese, sour cream, etc), enchiladas, spanish rice, refried beans, chips, salsa, and flan (or Mexican cookies) for dessert.

Guacamole is the best possible crowd pleaser, but to make it right you have to have access to Haas avocadoes (the ones with the dark green "pebbled" skin - not the smooth skin). If you can get Haas avocadoes, then go to www.epicurious.com and you will find lots of guacamole recipes. A totally simple guacamole can be made by just mashing the avocado with fresh lemon juice and a really good spicey salsa until you have a nice chunky consistency. ..there is always a 7-layer dip...all the trimmings in one big bowl, and a bag o' chips alongside it. hmmm....or simple nachos. with grilled steak and chicken...
lotsa cervesa in the fridge, lemon/lime wedges...the mexican cookies as a desert is a real bang for your buck....
