I have a GREAT spinach artichoke dip that i make that is soooo good!! Inspired by Copeland's restaurant, we make it so good at home theres no need to go out! Its easy and you dont have to measure perfectly for it to be good...i dont even have exact measurements written down...

1 small pkg of frozen chopped spinnach
1 jar of marinated artichoke hearts
4 oz of cream cheese
1 tsp of chopped garlic (or garlic powder)
1 cup of alfredo sauce
1/4 cup of rotel tomatoes
1/4 cup of shredded colby jack cheese
1/4 cup of parm cheese
a dash of hot sauce (if you like a lil more kick)
a few dashes salt and pepper

Defrost the spinnach and put it and the artichoke hearts and garlic in a food processor. Pulse it tull you get the consistancy you like...not too much or else it will be mushy. Put it in a bowl and work in the cream cheese with a fork. Add all other ingredients and microwave and stir untill its all melted and yummy...lol! Best served with fried bowtie pasta but chips or pita bread work great too... Im tellin you, this dip is very impressive!

Here is how you do the fried bowties:

Boil a pack of large bowtie pasta untill aldente. Drain. Dip them in egg, then coat in italian style bread crumbs. Fry in a deep fryer. As soon as they are done sprinkle them with parm cheese and shredded italian blend cheese. It really works best to get the bowties breaded and then freeze them untill you are ready to fry them. They fry easier that way and it will shorten your prep time on the day of. ENJOY!

stuffed mushrooms , w/cream cheese , bacon bits tiny shrimp,garlic and chives

i highly recommend edible fruit arrangements, they are actually verrry affordable and easy to make yourself...just buy a pack of skewers, a few cookie cutters, and some of your favorite fruit...
or even slicedfruit (use the cookie cutter) ...

rick tramanto is the premier chef for appitizers or amuse bouche. i would go online and order his book or go the the local book store to preview the book. keep in mind they should be no more than 2 bites. everyone always makes them so large. also you can do something simple that can be elegent such as a parmessan crisp shapped in a small cup with goat's cheese garnished with truffle and toppped with cavair. you couls even flavor the goat cheese

olive tapenade and table water crackers.
olive tapenade:
2 large cans black olives
1 smaller can green olives
olive or canola oil, about 1/4 cup
garlic powder

add olives to a food processor. add olive oil and garlic powder. pulse until finely chopped and has a consistency like caviar. serve in a pretty bowl with Carr's Table water crackers on a platter.

this is so easy and people love it!

i don't really measure things, so taste before you season. it may need more or less oil or garlic, depending on your taste.

fruit and cheese platters are always a good idea.
so is an antipasto platter with marinated mushrooms, tomatoes, cheese, cured meats (like salami), and a loaf of crusty bread...
i love to entertain!
