Hmm... well i was thinking about making home made Taco's... ;) My kids seperate everything though. But I like making taco salads for myself!!! ;)

Either that, or something quick and easy.

Haven't decided which one though!!!!

CRISP PORK MEDALLIONS WITH CREAMY CAPER SAUCE

Bread-crumb-coated pork medallions are golden on the outside, moist and juicy on the inside. The caper-yogurt sauce provides a burst of briny flavor.

For sauce
2/3 cup plain yogurt (6 oz; preferably whole-milk)
3 tablespoons mayonnaise
2 tablespoons drained bottled capers, finely chopped
1 tablespoon finely chopped fresh flat-leaf parsley
1/8 teaspoon black pepper

For pork
1 1/2 to 1 3/4 lb pork tenderloin
3/4 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
2 large eggs
1 cup fine dry bread crumbs
About 1 cup vegetable oil for panfrying

Special equipment: an instant-read thermometer

Accompaniment: lemon wedges; watercress or other baby greens

Make sauce:
Stir together all sauce ingredients in a bowl until combined, then chill, covered, until ready to use.

Cook pork:
Put oven rack in middle position and preheat oven to 350°F.

Cut pork crosswise into 1 1/4-inch-thick slices (medallions). What I use is a tenderloin and I cut it into rounds, slices.

Whisk together flour, salt, and pepper in a shallow bowl.

Whisk together eggs with a pinch of salt in another shallow bowl and put bread crumbs in a third shallow bowl.

Working with 1 medallion at a time, dredge medallions in flour, shaking off excess, and dip in egg, letting excess drip off, then coat with crumbs, pressing to help them adhere. Arrange pork in 1 layer on a baking sheet.

Heat 1/4 inch oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then panfry medallions, turning over once, until golden brown, 6 to 8 minutes total. Transfer to a clean baking sheet and roast in oven until thermometer inserted horizontally into center of meat registers 145 to 150°F, 6 to 7 minutes.

Serve pork with sauce, lemon wedges, and watercress.

Makes 4 servings.

We are having slow roasted chicken with a tomato gravy, rice, and broccoli.

one of my favorites dinner is: you get a bunch of raw shrimp, clean them and peel them. then you season it with black pepper, sea salt, a little olive oil and garlic. then grill the shrimp until pink. i usually have it with grilled asparagus.

I was wondering the same thing today but I just made slow roasted pork-chops yesterday and and it took ALL day so I bailed out and took the easy route and am going to go with burgers on the grill.

You should try chicken linguine with an alfredo white wine sauce - supper nummy and pretty easy to make.

-cook chicken breasts as usual with a few seasonings (salt, pepper, and onion salt)
-When fully cooked cut the chicken breasts into bite sized pieces and put in a sauce pan.
-Add about a half a cup of white wine (penoit gregio), shredded parmesean, romano, and a few tablespoons of italian dressing. Season to flavor.
- heat on low until its all mixed together then serve over noodles

Well, I am going out for pizza, I feel lazy today.

Stuffed Shells with Sundried Tomato Sauce, garnished with turkey sausage! YUM!

How about calzones. Its so good and easy to make.

How about breakfast?? Pancakes or waffles, eggs, sausage and bacon, hash browns, biscuits...Im planning a breakfast night for real soon! Most families are just too busy to have a big breakfast in the mornings, even on the weekends. There is just something about breakfast that brings a family together...why not do it tonight???

Bacon wrapped chicken...rice pilaf...and steamed broccoli with a dusting of parmesan cheese....
