Question:

What appetizer goes with beans and rice and baked chicken?

We're having a potluck for a small group (7) African Amerian and Puerto Rican students. I want to bring an appetizer. I could also bring a desert or possibly an alcholic beverage.


Answers:
Sounds like something fruity is needed. A variety of fresh fruit cut up with yogurt or chocolate to dip it in might be nice, or a fresh fruit salad as a side dish. Of course there are lots of fruity desserts too.

put some small grape tomatoes and seedless nicoise olives on the dish, too

A fresh fruit salad could be wonderful, or a vegetable tray and dip. There is already a lot of spicy and somewhat heavy flavored foods so anything lighter and sweeter would be a good counter point, even a nice green salad. Contrast the seasoning and color in the main dishes.

You can make chicken or beef taquitos. Or you can make quesidillas-cheese w/chicken or cheese w/beef or cheese and veggies. These are real easy to make and not to mention quick.

Cheese empanadas. In the frozen food section the empada pastry is there. You just fill them with mozz cheese and bake. You can fill them ahead of time and bake on the premises or fry and reheat on premises. Yummy!

Turkey Empanadas (Got the recipe from Bon Apetit 15 years ago, have been making them ever since. They're great, you'll get lots of good feed back)

makes 30

ingredients
1 pound ground turkey
1 large onion, diced
1 8-ounce can tomato sauce
4 teaspoons Cajun seasoning mix
1/2 cup packed grated Monterey Jack cheese (about 2 ounces)

3 7.5-ounce cans refrigerated biscuit dough (10 biscuits per can)
1 egg, beaten to blend


Oil for deep frying
preparation
Sauté turkey in heavy large nonstick skillet over medium heat until cooked through and brown, breaking up meat with fork, about 5 minutes. Using slotted spoon, transfer turkey to small bowl. Add onion to drippings in skillet and sauté until light brown, about 7 minutes. Return turkey and any juices to skillet. Add tomato sauce and Cajun seasoning; simmer until mixture is almost dry, stirring occasionally, about 8 minutes. Season with salt and pepper. Cool completely. Mix in cheese. (Can be prepared 1 day ahead. Cover and chill.)
On lightly floured surface, roll out 1 biscuit dough piece to 4-inch-diameter round. Place 1 tablespoon filling on round. Brush half of dough edge with beaten egg. Fold dough over filling to create half circle and seal edges by pressing with tines of fork. Set empanada on baking sheet and cover with damp cloth. Repeat with remaining biscuits and filling.

Pour oil to depth of 1/2 inch into heavy large skillet. Heat oil over medium-high heat to 350°F. Fry empanadas in batches until golden brown, about 2 minutes per side. Transfer to paper towels. Serve warm or at room temperature.

DONT BRING SALSA & CHIPS OR TAQUITOS. that is mexican food. & pr food is NOT spicey. It has flavor but not hot like mexican food. Bring tostones for an appetizer. They are flat fried plantains & delicious, great appetizer.

Just buy green plantains & cut them in slices about a inch wide & then put in a frying pan w/ about a inch of oil(after it heats up on medium) let them fry for only a minute until soft, not crispy them remove & flaten to a pancakes width & fry them again until crispy. Add salt or garlic powder to your liking. If you want you an even buy a tostonera to flatten perfectly.

For a dessert you can bring flan or guava filled pastries.. mmm. Or if you want to bring an alcoholic beverage, try coquito that is a popular party/holiday drink in PR. ALso pina coladas or anything w/ rum however they need to stay slightly frozen. Check out this pg for more recipes.
