Side dishes for party, main include shrimp and salmon. Please help!?

So Im throwing a party in a week for my sons first birthday party. However there will be mainly adults at the party. Only a couple kids. I was having a delema with what to serve for the party then I went to a favorite seafood place and found out they cater. I was thinking about getting a couple trays of salmon and shrimp scampi skewers and a tray of regular shrimp n cocktail sauce. But I definitly want to serve more than that. I was hoping yall might have some ideas of what might go good with this for a summer party. Basically I got a couple big bowls and a big tray and smaller big tray, a chips n dip thing. So I'd like to fill these with yummy things. Any help would be appreciated. Thanks in advance

With shrimp, and a bbq, I love the following side dish served cold....
Short grain brown rice
Diced black olives
Fresh corn sliced off the cobb (raw)
Finely diced red bell pepper
Finely diced red onion
cherry tomatoes, quartered or halved
Veganaise (or mayo of your choice, I find that this has the 'cleaniest' flavor)
Fresh basil torn or sliced
A couple splashes of tobasco
Plenty of salt & pepper
-mix all ingredients and chill for 1 - 6 hours

*option - add quartered artichoke hearts

This is so tasty, healthy and refreshing!

cajun or tropical rice pilaf. look up a recipe.

Everyone eats rice and its cheap to make a large amount.

Seafood is great with Margaritas so that can be the bevarage. make sure you make a pitcher of water with ice and maybe slices of lemon so that your guests don't get dehydrated. Then for the sides you can make a great potato salad:
INGREDIENTS
2 1/2 pounds red potatoes, cubed
1 cup sour cream
1/2 cup mayonnaise
1/4 cup white sugar
1/2 bunch green onions, chopped
1 cup shredded Cheddar cheese
1 tablespoon real bacon bits
DIRECTIONS
Place the potatoes into a pot, and fill with enough water to cover. Bring to a boil, and cook for about 10 minutes, or until easily pierced with a fork. Drain, and set aside to cool.
In a large bowl, mix together the sour cream, mayonnaise, sugar, half of the onions, and half of the cheese. Gently stir in the cooled potatoes. Top with remaining cheese and onions, and sprinkle bacon bits over the top.

Or you can make a colorful pasta salad:
INGREDIENTS
1 (8 ounce) package seashell pasta
1/2 cup finely chopped cauliflower
1/2 cup finely chopped broccoli
1/2 cup diced red bell pepper
1 cup cottage cheese
salt and pepper to taste
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and rinse with cold water.
In a medium bowl combine cooled pasta, cauliflower, broccoli, red bell pepper, cottage cheese, salt and pepper.

And last but not least make some spanish rice. It goes great with shrimp!!! Buy a box of fiesta sides Knorr Spanish Rice. Well have fun!

Keep it light, shrimp scampi and salmon are very rich meats. Arrange your sides with your main dishes, people are more likely to take what is in front of them rather than wander too far, so if you group your sides with your dishes you can use more variety and less overall food.

My suggestion- place your tray of salmon in the center of your buffet. Surround it with sliced fruit, veggies. maybe even a sharp cheese . For fruit I would use citrus, oranges go really well with salmon, as does melon. Maybe some dips/sauces too? light flavored kicked up with crushed walnuts, pecans, or even pistachios- which are awesomely colored and are versatile enough to go with darn near anything. Next I would offer a variety of crackers and small party breads. Go wild with flavor, keep it lively. At opposite ends of the table have the shrimp dishes, surrounded by classic party snacks.
