Party for 60, serving Chicken Vesuvio, what vegetables would you suggest?!

Simple sides!. You can use the frozen kind for convienence!.
Steamed Green Beans with toasted Almond Slivers!. Salt, pepper and a little olive oil to taste!.
SteameBroccolili and Cauliflower florets!. Salt, pepper, and butter to taste!.
Glazed Carrots!. nutmeg, cinnamon, sugar and butter, a little water!.
Preheat oven to 350 f
Put each frozen vegetable in a separate covered oven pan!. I use the aluminum ones you get the store!.
Make the sauces on top of the stove!. Pour over the frozen vegetables, stir and put into the oven!. If you preheated the oven, you can actually turn it off and the vegetables will come out perfect!. Just do this at least an half hour to an hour ahead of time depending on how many vegetables you put in a pan!.
Going by a serving size of 1/4 cup per person you could estimate a loose 2 lbs of each vegetable!. That is real tight guessimate, but you know your guests best!.

Well, if you're looking for cheap, simple, and easy a single plain vegetable would work such as green beans, corn, peas, etc!.
If you'd like to make it a little more interesting try a mix of cauliflower, broccoli, carrots, and pea pods, steamed, and seasoned with olive oil and italian three spice (thyme, basil, oregano) to match the protein!.Www@FoodAQ@Com

Green Beans, or if you're not putting peas in the dish, you could serve green peas on the side!.
