Prepping cakes in advance?

I'm baking about 10 different cakes for a party in two weeks, so obviously I'd like to get as much done in advance as I can. I know I can freeze unfilled, unfrosted cakes, but how long can you freeze a cake with, say fruit filling? I also understand fondant covering can increase the shelf life of a cake, although it shouldn't be refrigerated. If a filled, frosted cake is covered in fondant, how long is it safe to leave it out on a counter? And how long will the average frosting keep in the refrigerator?

you can't freeze filling, as it thaws it will run after it drys out it turns into hard gel...
I wouldn't leave a cake out on the counter for more than 2 days. (it WILL get moldy, especially in HUMID places.) You can keep a refrigerated cake about a week.

I'd make all the cakes, freeze them WRAPPED as well as possible. Put them in the fridge to thaw 3 days before. If you're doing just two layer cakes. Assembly line it it as well as you can. All cakes in a line, layer, filling, layer. Fridge. Take one out, ice it, crumb coat only. Fridge, etc...then frost all the cakes as usual...fridge. If you need help, ask family or friends. (ONLY if they can follow orders or know what they're doing.)

this may help

bake the cakes and freeze unfilled and un-frosted.

Prep the fillings and frostings ahead if they are storeable... but same day if not.

Then defrost and do your decorating the night before the party.

Make sure the cakes are defrosted before you put frosting on... or you can end up with soggy cake.
