Appetizer: tex-mex egg rolls, chips & salsa, quesadillas, jalepeno poppers, nachos

Salad: taco salad (minus the beef)

Main Dish: cheese enchiladas, rice and beans, veggie fajitas

Vegetable: corn, beans, squash

Dessert: pie!! apple, key lime, banana, etc!.

LOL !.!.!. Texas is the land of BEEF BBQ! !.!.!. But here are some of the things that we have, that you might be able to use:

CON QUESO DIP
1 8-oz!. softened cream cheese
8 oz!. shredded cheddar cheese
2 cans Rotel tomatoes (I use one hot, and 1 mild)
Melt together until blended, and serve hot with tortilla chips

BAKED BEANS !.!.!. MAC & CHEESE !.!.!. Green salad !.!.!. Grilled zucchini & crookneck squash (on BBQ) !.!.!.Fresh whole GREEN BEANS!.!.!. Maybe you could roll some extra-firm tofu in egg wash & seasoned bread crumbs and bake it!. It MIGHT taste like fried chicken !.!.!.!. BBQ some whole portobello mushrooms and serve on buns with lettuce, tomato, onion & BBQ sauce!.!.!.!.

FRUIT AMBROSIA
2 c!. heavy whipping cream
1/2 c!. sugar
1 tsp!. vanilla
1/2 tsp!. almond extract
1 large can mandarin oranges, drained
2 cans fruit cocktail, drained
3-5 c!. miniature marshmellows
Beat cream, sugar & extracts until very stiff peaks!. Fold in fruit and marshmellows!. Chill!.!.!.!.!.

TEXAS SHEET CAKE
2 sticks melted butter
4 eggs
1/3 c!. cocoa
1-1/2 c!. flour
1 c!. coconut
1 c!. chopped nuts
1 large jar marshmellow cream (fluff)
ICING:
1 stick melted butter
1/3 c!. cocoa
1 tsp!. vanilla
1 box powdered sugar
1/2 c!. chopped nuts
1/3 c!. canned milk
!.!.!.!.Mix first 6 ingredients together by hand!. Bake at 350 in jelly-roll pan (16x11x1") for 20-30 min!. While cake is still hot, spread marshmellow cream on top!. Let cake cool completely before icing!.!.!. Mix the last 6 ingredients!. The icing may be thiun, but will set as it cools!. Frost and cut into squares

also, BANANA PUDDING with vanilla wafers in it is very popular!.!.!.!.!.!.

Not that much "Mexican" or Tex-Mex food in Dallas area!.!.!.!. it's more steaks and BBQWww@FoodAQ@Com

There are commercial Texas & Tex-Mex veggie burgers you could try!. Amy's Kitchen makes a barbecue flovor "Texas" veggie burger which is really good!. also I saw but haven't tried Tex Mex veggie burgers from Dr Praegers!. Or you can also Google Tex-Mex veggie burger & get ideas!. Www@FoodAQ@Com
