What could I make for Christmas morning?

My husband has to work Christmas Eve and Christmas Day.We are getting together with his family to open presents up(which is around 7-8am) and I would like to have a breakfast set up for the family.What could I make that is simple that doesn't require a lot of fuss as we will be going back home so he can sleep the day away while the rest of the family will be off for Christmas Dinner.
Any suggestions will be helpful.

Do as much ahead of time as possible. So some homemade muffins (previously prepared and frozen) or biscuits. A fruit plate, coffee, juices (cranberry is especially festive for Christmas). Oh, you could make a strata, which would be prepared the night before and warmed up in the morning-that would be perfect! No one is going to be so hungry at that time of the day, so just some coffee and some bread and fruit should be sufficient. I'm sure, given the hour that you all have to get together, no one would be expecting a full breakfast! It's hard when either one of you has to work on Christmas...

Hmmm the choices are endless here.

I would do:

Sausage links or the round sausage in the log
Bacon - men gotta have the meat and these take almost hte same time if everything is already defrosted. Then the smell lingers throghout the house and ahhh its nice.

Then I would do eggs of course depending on which kind he liked.

Then possibly I would do some pancakes. Everyone likes a few pancakes and syrup every now and again. Heres my recipe
Ingredients:
1 large egg
1 cup of all-purpose flour
*1 cup buttermilk
1 tbls. Granulated sugar
2 tbls. Vegetable oil
1 tsp. Baking powder
? tsp. Baking soda
? tsp. Salt

Directions:
-In a medium mixing bowl beat egg until fluffy. Add remaining ingredients and beat until smooth. Cook immediately.

For thinner pancakes add in more buttermilk. Makes about 9 (4”) pancakes.

What about a nice casserole with lots of eggs and cheese that you could make ahead of time and then just pop in the oven? That along with some fruit and nice breads/muffins/bagels would probably make everyone happy. And if you serve mimosas - orange juice and champagne (you can get away with cheap champagne), everyone WILL be happy!

just like tea cookies (butter/shortbread), tea, coffee, oj, or some hot chocolate. and some fruit.

Keep it simple. Put out some Bagels and croissant and spreads. Maybe have a fruit tray with strawberries, melon, and grapes. A gallon of OJ and some coffee and voila!

If you want to cook something, I like to fill muffin tins halfway with eggs and then add cut-up cooked pieces of bacon, sausage and other omelet fix-ins. Bake for a few minutes and pop-em out. I like this because they are so cute, kids love them, and you know you have enough.

I would do some sort of breakfast casserole. This recipe is for egg casserole and the beauty of it is that you can prepare it a few days in advance, keep it in the frig, then just stick it in the oven when you are ready. Toast some bread, put out butter and jam and you have a wonderful hot breakfast with almost no prep on Christmas morning!

Preheat oven to 350°.

Spray or grease a two-quart casserole dish with cooking oil.

Ingredients:
12 eggs
1 cup plain yogurt
1 teaspoon Lawry's seasoned salt (or, to taste)
3/4 stick butter or margarine
2 cups shredded hash brown potatoes (thawed)
1/4 cup (or less) chopped onion
1 cup grated sharp cheddar cheese

Beat eggs, yogurt, and salt together.

Melt butter and lightly sauté onion. Add thawed potatoes. Stir to mix.

Pour in egg mixture and lightly stir to blend ingredients.

Pour into casserole dish. Sprinkle grated cheese over casserole.

Bake at 350° for approximately 25 minutes or until knife comes out clean when inserted.

Cut into 8 squares.

Festive Breakfast Casserole
1/2 lb. bulk pork sausage
6 cups white bread cut in cubes
1 1/2 cups shredded Cheddar cheese
1 cup Chunky Salsa
4 eggs
3/4 cup milk
Cook sausage until browned. Pour off fat. Arrange sausage in 2-qt.shallow baking dish. Top with bread cubes and cheese. Mix picante sauce, eggs and milk and pour over all. Cover and refrigerate 2 hr or overnight. Bake uncovered at 350°F. for 45 min. or until done. Serves 6

My aunt recently sent this idea to me in a email. I think it would work nicely for what you are thinking about.

ZIPLOC OMELET

(This works great!!! Good for when all your family is together.
The best part is that no one has to wait for their special
omelet!!!)

Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.

Crack 2 eggs (large or extra-large) into the bag (not more than 2)
shake to combine them.

Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.

Each guest adds prepared ingredients of choice to their bag and
shake. Make sure to get the air out of the bag and zip it up.

Place the bags into rolling, boiling water for exactly 13 minutes.

You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.

Open the bags and the omelet will roll out easily. Be prepared for
everyone to be amazed.

Nice to serve with fresh fruit and coffee cake; everyone gets
involved in the process and a great conversation piece.

Imagine having these ready the night before, and putting the bag in boiling water while you get ready. And in 13 minutes, you got a nice OMELET for a quick breakfast!!!

Eggs Benedict (toasted English muffins, topped w/ canadian bacon, poached egg, and hollandaise sauce)

Fresh Fruit Salad or Ambrosia (use some nice fruit like pineapple, kiwi, star fruit...)

And maybe some homemade muffins, but you really won't need them w/ the English Muffins.

maybe make pancake batter ahead of time and put a plastic wrap on top and in the fridge ready to pour on to the griddle for breakfast like might have to add more milk but that way its not thick when pouring it on the pan use bisquick and just add cinnamon vanilla sugar and u should be good
and buy precooked sausage links that u just heat in microwave and their done

Always think diverse flavors - savory, sweet, rich, light.

So I usually make biscuits, split these open and place in slices of spiral cut ham or black-peppered bacon. Serve gravy on the side.
I usually do a breakfast casserole with eggs, cheese, hashed brown potatoes, bread cubes.
Then I offer a simple tropical fruit salad. And lastly - pastries.

Basically - all you have to do is prepare the casserole the night before and refrigerate it. Fix the fruit salad the night before.

On Christmas morning - pop the casserole in the oven. Pop the biscuits in the oven. Fry your ham or bacon. Fix the gravy and then set it out on the table.
