If you're looking for homemade....this is the best and most fun.
Go out on the porch with a bunch of kids and an old-fashioned hand-cranked ice cream freezer.
Bring out a mixture of:
6 eggs
2 cups sugar
1/4 teaspoon salt
1 tablespoon vanilla extract
13-ounce can evaporated milk (1-1/2 cups plus 2 tablespoons)
1 gallon whole milk
In a large mixing bowl, beat eggs. Add sugar gradually, stirring constantly. Add salt, vanilla and canned milk. Add about a pint of the fresh milk and mix.
Pour it in the freezer, and laugh as the kids crowd around as you try to pour in enough more milk to fill it. Put on the lid.
Pack ice and rock salt into the freezer around the center container.
Let the kids take turns cranking it.
See their surprise as it gets harder to crank as the ice cream thickens.
Best part tho is the grins on everyone's faces as they eat it.

5 egg yolks
2/3 cups sugar
1 cup half and half
2 tablespoons butter
1 cup whipping cream
2 teaspoons vanilla extract
Beat yolks and sugar until blended. Pour in top of double boiler. Stir in half and half. Cook and stir over boiling water until thickens. Set aside - stir in butter. While cooling on a rack, stir occasionally until room temperature. Stir in whipping cream and vanilla. Freeze accordingly and enjoy!

In medium bowl with hand beater or wire whisk, beat eggs and milk and eggs together until well blended; stir into sugar mixture until smooth. Cook for about 15 minutes over low heat, stirring constantly, until the mixture thickens and coats the spoon, being sure that the custard does not boil or it will curdle; cool. Stir in 2 cups heavy or whipping cream and 5 teaspoons vanilla extract. Put in an electric ice cream freezer according to manufacturer’s directions.

There are loads of different ways but one really simple delicious one I know:
Whip cream with a whisk so stands in peaks.
Add spoonful or two of jam.
Freeze.
You make a custard on the stove of cream and eggs, sugar and whatever flavors you choose. Let it chill overnight, then pour it in an ice cream maker that continues to freeze it as it churns air into it to expand the custard and make it lighter.
