Best meat dishes, and why?!

Question:

Best meat dishes, and why?

Answers:
My personal "best meat dish" would be any form of stew - cook for minimum of 5 hours on a low heat then, to make sure it is the best it can be, do not eat/serve it until the next dat(Adding any veggies you like to the pot only maximises the taste)

I am going to say I like stuffed bell peppers with ground beef and cheese and rice ..

I was first introduced to Beef Shawerma, a Middle Eastern/Mediterranean dish while I was in college. I LOVE it. You can also get Chicken or Lamb Shawerma. It is slow roasted marinated meat on a rotisserie in front of a hot heat source (traditionally a wood fire, but nowadays most likely a gas/electric heat source).

It always has the faintest tastes of cardamom, nutmeg or cloves (I can't quite tell what it is)... but it's so unexpected, and tastes so surprisingly good.

The rich eastern spices with the woody roasted tender meat is incomparable to anything else I've ever had. I LOVE it.

A close second is Bulgoki (or, Korean Barbecue). I lived in Korea as a small child and my mother cooked this as a special family dinner all the way through my high-school years. The savory soy sauce complemented with the addition of sugar and vinegar tastes so fabulous with the green onions and sesame seeds.

Mmmmmmm.... now I'm hungry.

My favorite meat dish of the moment is rosemary garlic beef roast.

2-3 lb beef roast (I use chuck or round)
2 good handfuls fresh rosemary sprigs
salt, pepper
1 bulb garlic (cloves separated)
1/2 lb butter
1 750ml bottle red wine

so... tie up the beef with twine, one string every inch or so. Pur a little olive or other veg. oil onto the roast and massage it in. Season with salt and pepper to taste.
Take the rosemary sprigs and tuck them into the twine, until the meat is completely covered.
Brown the roast on med-high heat in a rosating pan on top of the stove. Remove from heat and add garlic to pan. Place in 350 degree oven for 20 minutes.
Add wine (entire bottle) and butter(cut up) to pan. Return to oven and bake another 20 minutes, or to desired doneness. 40 mins will make it about med.rare.

When it's all done, put the meat on a platter, remove the twine and rosemary sprigs. Squish up the garlic in the pan juices, and pour the pan sauce over the cut-up beef. It's amazing.

I like grilled chicken breasts covered in cheese and sauteed & diced onions. It's fairly good for you and simple and quick to make.
