Erm. I would think that someone probably dropped the egg and watched in astonishment as it turned to a mushy solid in the heat of the scorching sun. And then for some strange reason...they ate it. (This is possibly where the bet came in. >_>)

it was probably just something that humans saw animals do and then copied it.
I don't know who, but I'm sure it was because they were HUNGRY!
My best guess is that we learned to eat eggs by observing some other animal that feed on eggs. Tried it, and liked it. Liked it a lot better when someone figured out the whole fire + egg thing. Proteins are awesome.
That behaviour probably comes from animals\ancestors that didn't think too deeply about it.
And how about oysters?
