Question: I am having a small dinner party with my friend!?
Do you have any ideas of what i could cook!.I like fish but wouldnt mind cooking meat either anything except pork!.It is not something i do frequently so i want something relatively easy but i want it to look like ive put alot of effort and want sumthing kinda posh!.

Seared Salmon with Wilted Citrus Spinach

1 grapefruit and zest, divided
2 oranges and zest, divided
1 cup slivered almonds, toasted
4 to 5 tablespoons extra-virgin olive oil (EVOO), divided
4 salmon filets (about 6 ounces each)
1 red onion, thinly sliced
1 tablespoon Dijon mustard
3 tablespoons white wine vinegar
Salt and black pepper
1 bag of spinach

After zesting the grapefruit and oranges, slice the peel and pith off, cut fruit into slices and reserve!.
Preheat a small skillet over medium heat to toast the slivered almonds!.
Preheat a large skillet over medium-high heat with a few turns of the pan of EVOO, about 3 tablespoons!. Season the fish filets with salt and pepper, and transfer to the hot skillet!. Cook for 4-5 minutes on each side or until cooked to desired doneness!.
Meanwhile, preheat another large skillet with two turns of the pan of EVOO, about 2 tablespoons, over medium heat!. Add the red onion, the orange and grapefruit zest, mustard and white wine vinegar!. Season with some salt and pepper!. Just before you are ready to plate, add in the spinach and toss!.
Divide the citrus spinach between your serving plates, top with the seared salmon and sprinkle with the toasted almonds!. Garnish with grapefruit and orange slices!.

Mixed bag of salad greens, washed, rinsed, drained!.
Some fresh cilantro, washed, rinsed drained for garnish (just the leaves and delicate stem parts)

Can or two of chicken breast, butter, olive oil, citrus grill spices blend
Preheat frying pan add small amount of olive oil and a pat of real butter add can of chicken breast with liquid, sprinkle with spices!. Heat until liquid is absorbed or evaporated; turning chicken occasionally!.
Serve hot over chilled salad greens, add garnish!.
Dressing, for salad; hot rolls or garlic bread or toast points!.

Same idea will work with a fresh fillet of fish, broiled with butter and spices or lightly battered with a wet pancake batter and fried served over the greens!.

Pound cake slice on dessert plate, garnish with Chocolate syrup, chocolate curls/leaves and large scoop of ice cream!.

Fruit cocktail with mandarine oranges, extra cherries, pineapple, pecans and coconut--secret ingredient cinnamon

Sparkling juice or fresh tea or lemonaid made with an orange and garnished prettily!.

Presentation--cloth table cloth & napkins, centerpiece w/wo candles, unusual serving dishes, sparkling dinnerware and glasses, wine and appetizers optional!. Fresh hot tea!? A unique teapot or teaset!

Appetizer: Cherry and pineapple toothpick kabobs
Ham and cheese toothpick kabobs
(use frilly toothpicks and serve on cold platter)

4 boneless skinless chicken breasts
Salt and freshly ground black pepper
All-purpose flour, for dredging
6 tablespoons (3/4 stick) unsalted butter
2 tablespoons shallots, sliced
1 tablespoon chopped garlic
1 1/2 cups dry white wine
1 cup whipping cream
1 tablespoon chopped fresh Italian parsley
2 (10-ounce) packages frozen cut-leaf spinach, thawed, drained

Sprinkle the chicken with salt and pepper!. Dredge the chicken in the flour to coat lightly!. Shake off any excess flour!. Melt 2 tablespoons of butter in a heavy large skillet over medium heat!. Add the chicken and cook until brown, about 5 minutes per side!. Transfer the chicken to a plate and tent with foil to keep it warm!.

Melt 2 tablespoons of butter in the same skillet over medium heat!. Add the shallots and garlic and saute until the shallots are translucent, stirring to scrape up any browned bits on the bottom of the skillet, about 1 minute!. Add the wine!. Increase the heat to medium-high and boil until the liquid is reduced by half, about 3 minutes!. Add the cream and boil until the sauce reduces by half, stirring often, about 3 minutes!. Stir in the parsley!. Season the sauce, to taste, with salt and pepper!. Add the chicken and any accumulated juices to the sauce, and turn the chicken to coat in the sauce!.

Meanwhile, melt the remaining 2 tablespoons of butter in another large skillet over medium heat!. Add the spinach and saute until heated through!. Season the spinach, to taste, with salt and pepper!. Arrange the spinach over a platter!. Place the chicken atop the spinach!. Pour the sauce over and serve!.
