Whoa girl I am sending the gingerbread man over to help you!!!! Just bake what you can and make some without for others that don't like raisins. God will give you the strength and you are a kind woman to do this. I love them fresh baked muffins with coffee mmmmm.

I would rebel if my religious organization asked me to bake 400 of anything!! That's pretty obnoxious.
Go to GFS Food Services and get the mix. they give a discount to churches and then all you have to do is bake them.
Are you the only one in your church that knows how to bake?
Enlist someone else to bake half of them at least.
Also there are a LOT of people who hate raisins, so only put raisins in 200 of them.

You could make another batch without raisins - there might be a few others that will thank you later for doing just that.
