Anysone have suggestions for elegant hor's d'oeuvres?

My brother is getting married in a couple of months, and I offered to cater the rehearsal party. I am looking for ideas for some really elegant finger foods to serve - either hot or cold

A antipasti tray, burchetta , mini meatballs on a toasted small peice of bread, crab meat stuffed mushrooms , mini crabcakes, also try searching hor's d'oruvres on yahoo food.

Here is an idea for a couple of easy ones.

Boil shrimp using shrimp/crab boil. When done, peel and devein. (use heads on shrimp if you can)

Slice a cucumber into thin rounds.

Make a sauce of equal parts cocktail sauce and good mayo.

Make another sauce of plain yogurt with chopped chives and roasted garlic.

Place a single boiled shrimp on top of a cucumber round, then top with single, very small dollop of one sauce. Garnish with chive, parsley, or cilantro.

Easy, cheap, and elegant.

Second, either roast chickens or buy them already roasted (Sam's Warehouse has great ones). This is for mini-empanadas.

Take the roasted chicken, add a packet of taco seasoning, water according to directions, one can of old El Paso green chiles and cook until warm through and chicken has acquired taco seasoning taste.

Buy pre-made pie dough.

Using a small round cookie cutter, cut out ovals, fill with chicken mixture (but do not over fill). Fold into half moon shape and bake on a cookie sheet, accoridng to pie dough instructions. (before baking brush on an egg wash with just a little cream added, this makes them shiny and golden).

Deviled Eggs in Mini Phyllo Shells

2 packages of mini Phyllo Shells
6 hard boiled eggs, shelled
1/2 cup mayonnaise or salad dressing
1 Tbsp. prepared mustard
2 teaspoons white vinegar (or sweet pickle juice)
1/4 teaspoon salt
Optional Fillings
1/2 teaspoon dry dill
2 teaspoons horseradish

Optional Toppings
Chives
Paprika
minced ham
crumbled cooked bacon
strip of stuffed green olive

Place whole eggs (yolks and whites) in a food processor and puree. Add the mayonnaise, mustard, vinegar (or pickle juice) and salt (and any of the optional ingredients). Fill 30 Mini Shells with the Deviled Eggs mixture (I put the filling in a large zip lock bag and pipe it into the shells), and garnish as desired with optional toppings. Makes 30 appetizers

Prosciutto Pinwheels

Pinwheels can be made in advance, wrapped and unbaked, and frozen up to three months. Bake shortly before serving. Since this recipe uses half a package of puff pastry, doubling is easy. (This recipe makes about 4 dozen pinwheels).

All purpose flour for rolling
1 sheet (from 17 oz package) frozen puff pastry, thawed
5 ounces pecorino cheese, graded (about 1 ? cups)
? pound prosciutto, thinly sliced

On a clean, lightly floured surface, roll the sheet of puff pastry into a 1/8 inch thick rectangle, about 10 by 14 inches. Sprinkle with half the grated cheese. Top with a single layer of sliced prosciutto and sprinkle with remaining cheese. Starting with the longest edge, roll pastry into a tight log. Transfer to a baking sheet and freeze 45 minutes or until firm enough to slice.

Preheat oven to 425 degree. Slice log into ? inch thick slices; place on baking sheet, and bake 5 minutes. Reduce oven temperature to 375 and continue baking until golden brown and cooked through, about 15 minutes. Cool on a wire rack and serve.

Smoked salmon, avocado cream cheese on mini toasts

- Mash 1 avocado, 250 grams cream cheese. Add a bit of lemon juice, salt & pepper to taste.

- Add a heaped teaspoon of the avocado mix onto a mini-toast (you can buy these at the supermarket or a gormet food store).
- Wrap the avocado with a thin slice of smoked salmon

Very simple to make, looks & tastes great!
