Why do you need servers if its potluck? Just have everyone serve themselves if not, just be straight out and ask for volunteers to help serve. :-) Peace!
To me, the best way is just to come right out and ask for help. I myself would say something like " Would you mind helping me with the punch and keeping the cups full of ice?" I just believe in asking straight forward.
