3/4 cup and 3 tablespoons butter
3-3/4 small onion, chopped
5-2/3 cups shredded Cheddar cheese
3-3/4 (12 ounce) cans sliced mushrooms
3-3/4 (6 ounce) cans sliced black olives
3-3/4 cups chopped cooked ham
1-3/4 cups and 2 tablespoons sliced jalapeno peppers
44 eggs, scrambled
1-3/4 cups and 2 tablespoons milk
1-3/4 teaspoons salt and pepper, to taste
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C). Grease a 9x13 inch baking dish.
Melt the butter in a skillet over medium heat, and cook the onion until tender.
Spread Cheddar cheese in the bottom of the prepared baking dish. Layer with mushrooms, olives, sauteed onion, ham, and jalapeno peppers. In a bowl, scramble eggs together with milk, and season with salt and pepper. Pour egg mixture over ingredients, but do not stir.
Bake, uncovered, in the preheated oven for 30 minutes, or until no longer runny in the center and slightly brown on top. Allow to cool slightly, then cut into squares and serve

i suggest you make a breakfast quiche with bacon n eggs then just have mushrooms, cooked tomato and aspargus on the side wit maybe cooked onion aswell

use egg substitute get a big container and use a cup per person have selection like cheddar, green peppers, red peppers, onions, sundried tomatoes, mini sausages, bacon bites, etc. and just ask what they want person by person and add it to their omlet and serve it that way should be fast

u need about 70 eggs cook septet omelets like 2 1/2 eggs per person then fry toppings like onion peppers meat serve lol

2 medium onions diced
1medium green pepper diced
1 small red pepper
saute in butter until soft and add egg mixture
5 dozen eggs
italian dressing (approx. 1 Tablespoon per 2 eggs)
that's 6 Table spoons per dozen
salt and pepper to taste
extra sharp cheddar cheese shredded
mix all ingredients
cook and top with cheese
this is a great recipe my father used to make this for our large family and it was alwys a huge hit. Lots of people would turn their noses up to salad dressing in eggs however, you should trust me on this it's awesome!!

Put out quart size zipper freezer bags, a Sharpie marker, and all sorts of add-ins, like onions, bellpeppers, cheese, crumbled fried bacon, tomaotes, mushrooms, ham dices, etc. Have each person write their name on a bag, crack 2 eggs into it, and add whatever add-ins they like. Zip up tightly and mix. Drop bags into a very large pot of simmering water, stirring to keep moving. When done, scoop out, and call the person and tell them their omelet is ready. it will slip right out of the bag onto their plate. Garnish w/ more cheese or add-ins if desired.

You will need to double this, the third and the fourth recipes.

Turkey Fajita Omelet Recipe
Ingredients
2 ounces red wine vinegar
3 ounces chipotle chiles, seeded and diced
3 cups teriyaki sauce
1 Tablespoon garlic, minced
1 Tablespoon freshly ground black pepper
2 pounds turkey breast, cut across grain into thin slices
1 green bell pepper, cut in thin strips
1 red bell pepper, cut in thin strips
1 sweet onion, cut in thin strips
4 dozen fresh eggs
1 pound Monterey Jack cheese, grated
As needed sour cream
As needed guacamole
As needed pico de gallo


Instructions
Mix vinegar, chipotle chiles, teriyaki sauce, garlic and pepper together. Stir in turkey slices and marinate overnight in a covered container in the refrigerator.

Mix peppers and onions together. Hold for service.

Per order: Drain marinated turkey. In a hot skillet, saute 2 ounces turkey for 2 to 3 minutes, add 2 ounces peppers/onion and continue to saute until turkey is cooked throughout. Hold for service.

Prepare 3 egg omelet for each order, adding 1 ounce cheese. Continue to cook until cheese is melted.

Top each omelet with turkey/vegetable mixture, fold omelet in half.

Place on warm plate and serve with sour cream, guacamole and pico de gallo.

Yield: 16 servings

Brunch Baked Omelet (3 pans for 40 people)

This recipe is for one pan.

8 pieces of buttered bread (cubed)
3 cups cubed ham or turkey
4 cups shredded Cheddar cheese
6 eggs
3 cups milk
2 tsp. Dry mustard
Salt and pepper

Arrange bread, cheese and ham in buttered 9 x 13 pan. In separate bowl beat eggs, dry mustard, salt, pepper and milk. Pour slowly into pan. Bake at 350o one hour. Eggs will start to pull away from edges of dish when ready. Let set 5 minutes or so, cut into squares.


OVEN OMELET FOR CROWD

18 eggs (beat well)
1 c. sour cream
1 c. milk
2 tsp. salt
1/4 c. chopped onion (optional)

Add last four ingredients to eggs. Coat bottom of 9 x 13 inch pan with 1/4 cup butter. Pour eggs into pan. Bake at 325 degrees about 35 minutes. Delicious.


WESTERN OMELET FOR A CROWD

1 med. onion, chopped
1 c. milk
2 c. cooked ham, chopped
12 eggs, slightly beaten
1/2 tsp. pepper
6 tbsp. butter
1 med. green pepper, chopped
1 tsp. salt
16 slices bread, buttered

Heat butter in skillet. Add onion, green pepper and ham. Stir fry 5 minutes. Spread evenly in baking pan or casserole 15 x 10 inches.
Mix eggs, milk, salt and pepper. Pour over ham mixture. Bake in preheated oven at 350 degrees for 15 minutes or until firm. Cut into 8 pieces and serve between 2 slices of bread. To make half a recipe. Bake same length of time in 9 inch pan.
