Outdoor summer birthday party food ideas? Preferably somewhat healthy?

We'll have a party for my son's 2nd birthday with basically family members invited. We'll have a lot more adults than kids and really need some ideas on food. My husband is thinking of grilling some steak, shrimp, and hot dogs (low-fat), but what kind of sides/salads/ and desserts would you suggest? About half of the adults are trying to lose weight so healthier alternatives would be great! Oh, and we'll have about 16-18 people including 4 kids.

Sides would be tossed vegetables or coleslaw, mashed potatoe, and macaroni and cheese. If you are going for salads, do some caesar or just a spring mix to complement all the grilled foods you are making.

Watermelon is a great summery food. Also, strawberry shortcake is a pretty healthy dessert. Fresh corn on the cob is always good too.

Fruit Salad is always a good choice or fresh strawberries

A large Pasta salad with veggies and light italian dressing and lowfat mayo as the base dressing

Veggie plate with dip or you can do a fruit plate with a lowfat yogurt dip.

fruit & dip ( I use lg jar marshmello cream, 8oz cream cheese, about 1/8-1/4c pineapple juice) , veggie & low fat dip, grilled corn on cob, grilled veggies in veggie baskets tossed w/ olive oil & seasoned , taco salad (my families fav.), and low fat pasta salad ( easy cook pasta, add anykind of fresh chopped veggies, If you'll be outside add frozen peas just before you serve this will keep it cold, and low fat Italian salad dressing & toss easy & great )

Seven-Fruit Salad

? 1/2 cup lime juice
? 1 pint blueberries
? 1/2 cup water
? 1 pint fresh strawberries, sliced
? 1/2 cup sugar
? 1 1/2 cups watermelon balls
? 2 medium nectarines, thinly sliced
? 1 cup green grapes
? 1 large banana, thinly sliced
? 1 kiwifruit, peeled and chopped

In a bowl, combine the lime juice, water and sugar; stir until sugar is dissolved. Add nectarines and banana; toss to coat. In a 2-1/2 qt. glass bowl, combine the remaining fruits. Add nectarine mixture; stir gently. Cover and refrigerate for 1 hour.

Try this

1. Take a big plate and cover it with lettuce leaves
2. Cut of tomatoes and bellpeppers and take out their seeds (so they become like small bowls)
3. Put the dip you'll make (recipe is given below) in the tomato bowl
4. Put the veggies (celery, carrots and cucmbers) in long slices and put it inside the pepper
5. If you are putting cauliflower and broccoli then steam them and tuck one in at the side of the pepper.

Recipe for the dip (for 3 -4 cups of dip)

1. Take 1 and a half cup yogurt
2. Take 1 cup of sours cream
3. 4 table spoon olive oil
4. about a cup of baby spinach
5. salt, pepper, mint (as you like it)
6. 2 cloves of garlic
7. 1 teaspoon of hot sauce
8. 1 tomato
9. 1/2 avocado
10. 1 tablespoon mayo

Blend all the ingredients together

I would do a huge green sald with lots of veggies, just have oil and vinegar and maybe a low fat dressing
grill some veggies as well(squash,tomatoes,peppers,o...
also fruit kabobs are good or veggie kabobs
you could also scoop a watermelon and put fruit in it
you can do lowfat icepops as well or frozen yougurt with fruit on top

I would say a tray of vegetables and ranch dip, a fruit tray, baked chips(doritos, chips). Lays has a line of baked chips that are good a lot healthier then the regular old chips. You can do the baked tostitoes with a low fat salsa.
Angel food caked with strawberries and lowfat whipped cream. Or the dessert shells.
Baked apples and pears.
Coleslaw with light mayo. Potato salad with light mayo.
Lowfat keylime pie.

I love this salad, and it has been a big hit when I've made it for parties:

Aunt Mary Jo's Favorite Oriental Salad

1 large head Napa cabbage
1 bunch green onions
1 package Ramen noodles
? cup sesame seeds
? stick butter
1 small package (about a cup or less) slivered almonds
1 cup salad oil
1 cup sugar
? cup vinegar (I use white or cider)
1 tsp. soy sauce

Chop cabbage and onions. Crush Ramen noodles. Discard seasoning packet. Sauté noodles, sesame seeds, and almonds in butter until golden brown. Blend together salad oil, sugar, vinegar, and soy sauce. Toss together 20 minutes before serving. Oooo! It’s so good!
