What are the basics of hosting a business luncheon?

OK, I should be good at this because I own a catering firm, but I want to know much more. How many guests, are you paying, what is the goal for the meeting, where will it be held,etc. I know none of the above so here goes anyway. Make the food simple and easy to eat. Nothing that is "drippy" or needs a lot of carving. Also make it something alot of people will not object to...some people can't eat fish or nuts or pork. So, it;s chicken, most likely. If there are vegetarians then be sure to have enough for them that they don't feel awkward or hungry. KEEP IT SIMPLE.....this isn't their last meal.
