I'm planning a surprise retirement party for my husband. I want to have a tropical buffet. I'm expecting about 75-100 people. I need some food ideas that are quick and easy. I'll only have 3hrs to get everything done and set-up before he will show up. The party theme is Hawaiian. What I'm really stuck on is what kind of meat to have that's not just something plain but also will be easy to fix and to serve. Can anyone help me? I'm on a budget, (that's why I'm not having it catered). I was thinking on the line of some kind of chicken.

How about spare ribs? You can make them the day before and they will taste even better for the buffet, they are easy to eat and would go perfectly with your hawaiian theme.

SWEET & SOUR SPARE RIBS

3 lb. country style spare ribs
2/3 c. dark brown sugar
2 tbsp. cornstarch
2 tsp. dry mustard
2/3 c. vinegar
1 c. crushed pineapple, undrained
1/2 c. catsup
1/2 c. water
1/4 c. finely chopped onion
2 tbsp. soy sauce
Salt & pepper

Spread ribs, meaty side up, in single layer in large shallow pan. Brown in 425 degree oven for 20-30 minutes; drain off fat. Combine all remaining ingredients except salt and pepper in saucepan; stir smooth. Cook over medium heat until thick and glossy, stirring constantly. Sprinkle salt and pepper over browned ribs.
Spoon Sweet-Sour Sauce over each piece, using half the sauce. Reduce oven to 350 degrees and bake 45 minutes. Turn ribs; cover with remaining sauce and bake another 30 minutes or until well done.

HAWAIIAN CHICKEN

4 chicken breasts
1/4 c. flour
2 tbsp. butter
1 (10 oz.) pkg. frozen Hawaiian mixed veggies
1 (8 oz.) pineapple chunks
2 tbsp. brown sugar
1 tbsp. soy sauce
1/4 tsp. ginger

Cut chicken into 1/2-inch cubes. Toss in flour and brown in butter for 5 minutes. Simmer 5 minutes more after all other ingredients are added.

Boiled shrimp
Chicken wings... different sauces
Buy frozen meat balls serve with the different sauces
Sauces - Teriyaki, sweet and sour, BBQ, mustard sauce,
PIneapple sauce,

Fresh fruit trays
Fresh veggie trays
Cheese and Bread trays

In the Family Circle Magazine I just got today there is a recipe for Hawaiian Wedding cake. It is a sheet cake that has pineapple, coconut and nuts in it and more, sounded good to me.
I was planning to make it for a picnic this weekend.

A ham baked in pineapple! You can make the ham a day early,and just warm it up when needed.
