There is this irish cream bundt cake I made before, it was sooo easy. I think it was mainly pudding, yellow cake mix, and baileys. I think I found it on Allrecipes.com, everyone LOVED it. Have fun!!

A premium vanilla ice cream w/ a splash or two of kaluha is classic. Cream brulee made with grand marnier works well, too. Poached fresh pear in liquor or sauteed banana in rum served over vanilla ice cream is a hit, too!

May I suggest that you have one or two choices without alcohol? It may be that some people won't want, or can't have alcohol for any number of reasons: religion, drinking problems, pregnancy, etc. It would be a sensitive bit or foresight on your part if you provided that choice.

try a neat dessert drink..let me see...it was bacardi 151, chocolate ice cream and cinnamon...put in blender and make a yummy shake. top with whipped cream and cinnamon.
It's great , you can hardly taste the booze. ;)

CUBAN BREAD PUDDING
6 tablespoons unsalted butter
1 cup 1/2-inch diced pineapple
1 cup 1/2-inch diced bananas
4 large eggs
3 cups heavy cream
1 cup coconut milk
1 cup packed light brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
6 cups 1/2-inch cubes day-old Cuban or French bread
Coconut Rum Sauce, recipe follows
1/2 cup sweetened shredded coconut, toasted
Confectioners' sugar, garnishPreheat the oven to 350 degrees F.

Butter a 13 by 9-inch baking dish with 2 tablespoons of the butter. In a large skillet, melt 2 tablespoons of the butter over medium heat. Add the pineapple and bananas and cook, stirring, until they begin to soften, about 5 minutes. Remove from the heat. In a small saucepan, melt the remaining 2 tablespoons of butter. In a large bowl, whisk the eggs. Add the cream, coconut milk, brown sugar, vanilla, cinnamon and allspice, and whisk well. Add the bread, fruit, and melted butter, and stir well to combine. Let sit until the bread is saturated. Pour into the prepared dish. ( now when i made this i added coconut shavings to it when i poured it into the dish). Bake until golden and firm when pressed in the center, about 1 hour. Remove from the oven and cool slightly on a wire rack to set, about 20 minutes. Serve on dessert plates. Spoon the sauce over the pudding and sprinkle each serving with the coconut and confectioners' sugar.

COCONUT-RUM SAUCE
8 tablespoons unsalted butter, melted
1/3 cup heavy cream
1/3 cup coconut milk
2/3 cup sugar
1 large egg yolk, beaten
1/2 cup light rum

In a medium saucepan, combine all the ingredients except the rum. Cook over medium-low heat, whisking constantly, until the sauce has thickened and coats the back of a spoon, about 10 minutes. (Do not allow the sauce to boil or the egg will curdle and the sauce will not be smooth.) Remove from the heat, whisk in rum, and set aside to cool slightly before serving.

STRAWBERRY MARGARITA PIE
2 C. cleaned fresh strawberries
10 T. sugar
1 3/4 C. graham cracker crumbs
1/2 C. butter
3/4 C. sweetened condensed milk
7 T. Tequila
6 T. Triple Sec
2 T. fresh lime juice
2 C. chilled heavy cream

Butter a 9 inch springform pan. Toss the strawberries with 4 T. of the sugar. Blend remaining sugar with graham cracker crumbs, butter and sugar in the food processor. Press crumb mixture on bottom and sides of pan. Puree strawberries and sugar with the condensed milk, tequila, triple sec and lime juice. Transfer to a large bowl. In another bowl whip cream until stiff peaks form. Fold 1/3 into the strawberry mixture. Gently fold in the remaining whip cream. Pour into crust.
Cover and freeze overnight. Run a sharp, hot knife around pan to loosen, if necessary. Release pan sides. Cut pie into 8 - 10 pieces. Top with a strawberry if desired.
