Need ideas for a fall brunch?!


Question: Need ideas for a fall brunch!?
I need some ideas for food and decorations for a simple, but nice fall brunch or early lunch!. I don't know what to serve, but I want to stick with the fall theme!. Nothing too fancy, but I want it to be a nice party!. It is around Halloween, but I don't want it to be too halloween-ish!. Www@FoodAQ@Com

Crock Pot Hashbrown Casserole
32 ounces hashbrown potatoes
1 can cheddar cheese soup
1 can cream of mushroom soup
1 cup sour cream
1/2 cup butter
Put hashbrowns in crock pot!. Mix soups and sour cream together!. Pour over hash browns!. Cut up butter and stir into hashbrowns!. Cook on low for 4 to 6 hours, stirring occasionally!.

HONEYBUN CAKE
1 (18 ounce) package yellow cake mix or white cake mix
1/4 cup nuts, chopped (your choice)
1/2 cup sugar
4 eggs
3/4 cup oil
8 ounces sour cream
3/4 cup brown sugar
3 teaspoons cinnamon
TOPPING
1 cup powdered sugar
4 tablespoons butter
1/2 teaspoon milk
Directions
Pre-heat oven to 350 degrees Fahrenheit!.
Combine cake mix,nuts,sugar,eggs, oil and sour cream!.
In a separate bowl mix brown sugar and cinnamon and set aside!.
Pour cake batter into 8x8x2 inch square pan!.
Sprinkle brown sugar and cinnamon mixture over batter and swirl with knife!.
Bake for 30 to 35 minutes or until cake tester comes out clean!.
While cake is baking, mix the powdered sugar, butter and milk!. [You may need to add more milk; it should be the consistiency of a thin paste!.]
When cake is done, poke holes in the top with a fork and pour powdered sugar mixture over the top!.

For decorations, keep it simple!. Collect fall leaves as they come in all sorts of colors!.!.!.!.red, gold, orange, etc!. Buy a few small gords or mini pumpkins for decoration!. Fill martini glasses with cranberries, then top with water and add a floating candle to place on tables!.Www@FoodAQ@Com

I found the following recipe on AOL food!. It sounds yummy and roasted veggies always remind me of fall!. I'd serve it with some cinnamon baked apples or pears and some good, crusty bread!.

Roasted vegetable frittata

Ingredients
1 small zucchini, 1 inch diced
1 red bell pepper, 1 1/2 inch diced
1 yellow bell pepper, 1 1/2 inch diced
1 red onion, peeled and 1 1/2 inch diced
1/3 cup good olive oil
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1 tblsp unsalted butter
12 x-lg eggs
1 cup half and half
1/4 cup good grated Parmesan cheese
1/3 cup chopped scallions, white and green parts (2 scallions)
1/2 cup Gruyere cheese
Cooking Instructions
1!. Preheat oven to 424 degrees

2!. Place the zucchini, peppers, and onion on a sheet pan!. Drizzle with the olive oil and sprinkle with 1 1/2 tsp salt and 1/2 tsp black pepper!. Toss well!. Bake for 15 min!., add the garlic, toss with a spatula and bake for another 15 min!.

3!. Meanwhile, beat the eggs with a whisk in a large bowl with the half and half, Parmesan, 1 tsp salt and 1/2 tsp pepper!.

4!. When the vegetables are cooked, turn the oven down to 350 degrees!.

5!. In a 10 inch ovenproof omelet pan, heat the butter and saute the scallions over medium low heat for 1 minute!. Add the roasted vegetables to the omelet pan and toss with the scallions!. Pour the egg mixture over the vegetables and cook for 2 min over medium low heat!. Bake the frittata for 20 to 30 min, until puffed and set in the middle!. Sprinkle with the Gruyere and bake for another 3 min!., until the cheese is just melted!. Cut into 8 wedges and serve hot!.
Recipe Notes
You can roast almost any combination of firm vegetables you like!. I red onions, zucchini and peppers with a drizzle of olive oil and lots of garlic!. A 10 inch ovenproof omelet pan is perfect for this recipe

I don't have all the answers, but one idea could be canteloupe due to the orange/halloween theme also because it is good to have for brunch :) also orange juice and a ceterpiece made of leaves and fall flowers would add a lot, and a tablecloth with a fall theme to help create the fall mood!.

EDIT to Molly L's comment below: it states to light scented candles - DO NOT DO THIS!. I recently did that for a dinner party - the scents mixed and overpowered the food aroma to the point the guests were disgusted - big lesson i would like to pass on! food: eggs, bacon, pancakes, waffles, LOTS of fruit salad!. mac and cheese, sandwiches (small finger ones) veggies!. chicken, ham, kiesh, pie, and cookies, or brownies (or both)

drinks: juice, orange juice, punch, coffee, maybe soda!.

decorations: nice fall table cloth (leaves or something fall-y on it) make sure to have music!. also add nice center pieces on the tables! and wear something nice!.Www@FoodAQ@Com

Graham Streusel Coffee Cake --



INGREDIENTS
1 1/2 cups graham cracker crumbs
3/4 cup packed brown sugar
3/4 cup chopped pecans
1 1/2 teaspoons ground cinnamon
2/3 cup butter or margarine, melted
1 (18!.25 ounce) package yellow cake mix
1/2 cup confectioners' sugar
1 tablespoon milk



DIRECTIONS
Combine the first five ingredients; set aside!. Prepare cake mix according to package directions!. Pour half of the batter into a greased 13-in!. x 9-in!. x 2-in!. baking pan!. Sprinkle with half of the graham cracker mixture!. Carefully spoon the remaining batter on top!. Sprinkle with the remaining graham cracker mixture!. Bake at 350 degrees F for 40-45 minutes or until a toothpick inserted near the center comes out clean!. Cool on a wire rack!. Combine confectioners' sugar and milk; drizzle over cake!.

Spinach Brownies --



INGREDIENTS
1 (10 ounce) package spinach, rinsed and chopped
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
2 eggs
1 cup milk
1/2 cup butter, melted
1 onion, chopped
1 (8 ounce) package shredded mozzarella cheese



DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C)!. Lightly grease a 9x13 inch baking dish!.
Place spinach in a medium saucepan with enough water to cover!. Bring to a boil!. Lower heat to simmer and cook until spinach is limp, about 3 minutes!. Remove from heat and set aside!.
In a large bowl, mix flour, salt and baking powder!. Stir in eggs, milk and butter!. Mix in spinach, onion and mozzarella cheese!.
Transfer the mixture to the prepared baking dish!. Bake in the preheated oven 30 to 35 minutes, or until a toothpick inserted in the center comes out clean!. Cool before serving!.

Annie's Fruit Salsa and Cinnamon Chips --



INGREDIENTS
2 kiwis, peeled and diced
2 Golden Delicious apples - peeled, cored and diced
8 ounces raspberries
1 pound strawberries
2 tablespoons white sugar
1 tablespoon brown sugar
3 tablespoons fruit preserves, any flavor

10 (10 inch) flour tortillas
butter flavored cooking spray
2 cups cinnamon sugar



DIRECTIONS
In a large bowl, thoroughly mix kiwis, Golden Delicious apples, raspberries, strawberries, white sugar, brown sugar and fruit preserves!. Cover and chill in the refrigerator at least 15 minutes!.
Preheat oven to 350 degrees F (175 degrees C)!.
Coat one side of each flour tortilla with butter flavored cooking spray!. Cut into wedges and arrange in a single layer on a large baking sheet!. Sprinkle wedges with desired amount of cinnamon sugar!. Spray again with cooking spray!.
Bake in the preheated oven 8 to 10 minutes!. Repeat with any remaining tortilla wedges!. Allow to cool approximately 15 minutes!. Serve with chilled fruit mixtureWww@FoodAQ@Com

Hollow out some small pumpkins and fill them with flowers for the centerpiece!. Around the table scatter small pine cones, leaves and other fresh fall foliage!. You can serve pumpkin muffins, apple cinnamon coffee cake, chicken and Apple Sausage, roast Pork with Apple Stuffing, Bacon Fritters with Balsamic Onions, Whole Wheat Orange & Cranberry Rolls!.!.!.etc!.!.!. If it's a nice fall day sit your guests outside somewhere with a good view of the changing leaves!. Find some good fall scented candles to light too!.!.!. Yankee candle carries some fantastic ones like, Autumn Gold, Candied Apple, and Mulling Spices!.!.!.!.speaking of which, Hot mulled apple cider would be a lovely drink to serve!.

Look for what's fresh this time of year!. Like apples for example!. You could do an apple jam or apple crumble!. Pumpkins are sort of Halloweenish, but you could do a pumpkin flavored french toast!. Serve a warm cider and make sure that all of your food is hearty enough to stand up to the season!. I love to see pale golds with the reds and oranges of fall!.

Just a thought, but my dining room table is now set with a deep red runner and muted gold chargers!. Use the colors of the season to inspire your food!. Happy entertaining!Www@FoodAQ@Com
