What's a good luncheon menu with food that can be left out for hours?!
I am in charge of a teacher luncheon at the kids' school, and I have little experience in meal/menu planning!. We are to feed 25 people, almost all women!. Other moms and I will be dropping food off that morning, and the lunch is drop-in anytime from 11 - 1!. What would be easy that we can just bring and set up that morning!? I'm thinking nothing that would spoil, obviously!. We can use crock pots to keep things warm!. I need help with which foods and how much!. Thanks!Www@FoodAQ@Com

if they are calling it a 'luncheon' that is usually not expected to be a heavy meal!. your meal plan may depend on your location, time of year and climate (i!.e!. if it's going to be cold, you may want to have a soup)!. Check with your school's food service supervisor; they may have "ice sheets" that you can use, which would allow you to include menu items that would normally need to be refrigerated, or you can place items in a smaller bowl and place that bowl in a bigger bowl with ice in it to keep it cold!. On the other hand, since it's for the teachers, they may have a steam table you could use which would give you more options with your menu!.
Some specific menu ideas:
Soup, salad and bread sticks
Shredded bbq pork sandwiches and cheesy potatoes
Sloppy joe and chips
Lasagna and garlic toast (if they have a steam table you can use to keep the lasagna hot)
A couple of the moms could make a pan of bars or some cookies for a dessert!.
For meat, you need to figure 2-3 oz!. per serving!. For soup, figure 3/4 - 1 cup per serving!. Depending on how much time you have before the luncheon and the school district that you are in, you may even be able to order items through your food service department!.
