Well, not everyone likes it, but Thai Curry is simple, exotic, pretty quick and relatively cheap (depending on what you want in it)!. Buy a jar of either red or green curry paste and the directions will be right on it!. You basically just heat coconut milk, fish sauce (sounds gross, but necessary for depth of flavor, does not taste fishy in dish) and the curry paste in a pan, chop veggies and meat/tofu, add it in and cook!. Serve over jasmine rice!.
I know you said no pasta, but recently I made shrimp fettuccine alfredo from scratch and it was cheap, quick, easy, and delicious! Not to mention it looks fancy!. For the sauce you need 1/4 c butter, 1 1/2 c heavy whipping cream, 3/4 c parmesan cheese, 1 clove garlic, 1/4 tsp pepper, 1 tsp fresh parsley minced!. You melt the butter, add cream and bring to a gentle boil over medium heat!. Reduce heat, simmer for 3 min, stirring constantly!. Add 1 lb precooked shrimp and remaining ingredients and cook and stir until heated through!. Toss with cooked fettuccine (cook 8 oz) and sprinkle with parsley!. You could also substitute chicken for the shrimp!.
Good luck! Www@FoodAQ@Com
