Question: Any ideas for appetizers and desserts for an Oktoberfest!?
I am having a party for friends to celebrate Fall (my favorite season)!. I am going to have a bunch of different Oktoberfest beers but am looking for ideas for appetizers and desserts that have a fall/harvest theme!. Ex!. Apple butter/ham/cheddar open-faced sandwiches; sweet potato pie tarts, etc!.!.!.!.!.!.

Well it depends on what youre looking for!.

If you want your guests to live a real Ocktoberfest, then give them salty appetizers!. That should keep them drinking beer!. Thats why they give you peanuts, pretzels etc!.!. in bars, So you keep buying beer, salt makes you thirsty!.

And about the desserts!. Well, after drinking that much beer you would really want to keep away from any dessert!. Sugar will give you a heavier, nastier hangover!.

Parmessan Rounds - make lots cause they go fast (and they're really easy):

1 cup mayo
3/4 cup shredded (not grated) parmesan cheese
about 1/3-1/2 cup chopped green onion
25-30 Ritz crackers

Put the mayo, cheese and onions in a big ziploc and work them together in the bag until blended!. Lay the crackers out on a baking sheet!. Snip a pretty big hole in the corner of the bag and squeeze the mixture out into little piles on top each of the crackers!. Press slightly with the back of a spoon!. Broil about 4-6 inches from the heat for about 2-3 minutes or so until melty!. But keep an eye on them! The crackers burn around the edges really quickly if you're not careful!.

that sounds like so much fun! how about a cheese ball rolled in chopped nuts!? or baked apples, or something with stuffing (maybe stuffed mushrooms!?), or pecan pie!. you could make candied pecans or almonds to have in a bowl!. popcorn balls, candy/caramel apples!.!.!.so many great fall memories! and don't forget hot apple cider as an alternative drink :-) have fun!!Www@FoodAQ@Com

Bratwurst Bites with Curry Ketchup
(Cook bratwurst then cut in bite size pieces, serve with curry ketchup)
Rouladen Pinwheels
2 slices Rouladen meat (abt 1/2 pound each)
salt & pepper
German mustard
4 slices bacon, uncooked
4 Tbsp chopped onion
4 Tbsp chopped dill pickles
butter

Directions
Salt and peper each slice of meat and cover with mustard!.
Lay bacon strips lengthwise over meat and sprinkle with onions and pickles!.
Roll tightly (as a jelly roll) and skewer!.
Brown on all sides in butter!.
Put in a pot and cover with water!. Simmer for an hour!.
Add water as needed to keep meat covered while cooking!.
Thicken the final broth with a roux to make the gravy!.
Cut rouladen into bite size pieces so that you can see the pickle, etc!. in the middle!. Serve extra gravy to dipping!


Apple Struedel
(Made with phyllo dough and fresh apples)

Black Forest Cupcakes
1/4 c unsalted butter
1/8 c Hershey's Special Dark Cocoa Powder
3 T water
1/2 c granulated sugar
2 T well beaten egg
1/8 c plain yogurt
1/2 T rum or kirsh (or just use vanilla)
1/2 c all-purpose flour
1/4 t baking soda
1/4 t baking powder
pinch of salt
1/4 c dried sour cherries

Preheat oven to 350 F!. Prepare muffin tins!.
Melt butter in a large heavy saucepan over moderately low heat, then whisk in cocoa!. Add water and whisk until smooth!. Remove from heat!. Whisk in separately sugar, egg, yogurt, and vanilla!. Sift flour, baking soda, baking powder, and salt into the cocoa mixture and whisk until just combined (it will be a little bit lumpy)!.

Coat the bottom of each muffin tin with a little batter then sprinkle in a single layer of dried cherries!. Finish filling muffin tins to about 2/3 full for rounded cupcakes or 1/2 full for flat cupcakes!. Bake for 18 - 20 minutes until a skewer or toothpick comes out clean!. It's a moist cake, so don't worry if a few crumbs stick to your tester!.
Allow cupcakes to cool!.

Makes 4 - 6 cupcakes!.

Whipped Cream Frosting
(Adapted from Allrecipes)
The gelatin in this whipped cream makes it hold up to piping, just make sure it is completely melted so you don't get lumps!.

1/2 c heavy cream
1 t confectioners sugar
1/4 t vanilla
3/4 t cold water
1/4 t unflavored gelatin

Whip the cream, sugar & vanilla together just until soft peaks form!. Set aside!.
Mix the water & gelatin together in a small bowl and microwave briefly, about 10 seconds, until the gelatin is dissolved!. Allow to cool slightly but not get hard!. Add to cream & continue whipping until stiff peaks are formed!. Keep in the refrigerator until ready to use!.

Makes enough to frost 6 cupcakes!.Www@FoodAQ@Com
