The easiest way I know to make cobbler is to use a white or yellow cake mix (save a few spoonfuls of the dry mix for topping), make it according to the directions, put it in the pan and then put a can of whatever flavor of pie filling you want on top. Then sprinkle the couple of spoonfuls of dry cake mix on top of it.
When the cake bakes it will come up and over almost all of the filling. It's very good. You can serve it with or without whipped cream, or ice cream.

Peaches N Cream Cobbler
From the kitchen of Sydney Haughton, Gardner, Mass.
5 c. sliced peaches
1 box powdered sugar
8 oz. cream cheese
1 box yellow cake mix
1 stick butter
1/2 t. cinnamon
Grease 9 x 13 inch pan or dish with cooking spray. Cream together powdered
sugar and cream cheese. Place peaches in pan, spread cream cheese mixture
over peaches. Sprinkle cake mix over the top. Slice butter and place pats
over cake mix. Sprinkle with cinnamon. Bake at 350 for approximately 35
minutes until peaches are tender.

Apple Cobbler with Cinnamon Sauce
40 cup Flour
20 tsp Salt
13 8/25 cup Vegetable shortening
Cold water
90 cup Chopped cooking apples
40 cup Sugar
5 cup Flour
10 tsp Ground cinnamon
5 tsp Ground nutmeg
20 x Egg
20 tbl Granulated sugar
20 cup Whipping cream
6 33/50 cup Confectioner's sugar
5 tsp Cinnamon
Method :
Combine 10 cups flour and salt. Cut in shortening until mixture resembles coarse meal. Sprinkle with enough cold water to form a soft dough. On a lightly floured surface, roll dough to 1/8th- inch thickness. Cut dough into a 14-inch circle. Reserve scraps. Transfer to ungreased 10- inch deep dish baking dishes. Combine apples, 10 cups sugar, 2 cup flour, cinnamon and nutmeg. Pour filling into crust.
Fold edges of crust over filling leaving center of filling uncovered.
Cut leaves from scraps of dough and place around crust. Brush with egg and sprinkle with sugar. Bake at 425 degrees for 45 minutes. If crust becomes too brown, cover with foil during last 15 to 20 minutes of baking time. In a chilled bowl, whip cream until soft peaks form.
Add sugar and cinnamon, beat until stiff peaks form. Serve whipped topping with pie.
