basicly you need to know what kind of people you are cooking for, if elderly people you need to do something soft and tasty like gammon with sweet sauce!!!!!!!!!!

I'm a huge fan of soups....everyone likes soup....and it fits well w/ Harvest theme. Also, cornbread w/ honey butter would be nice if this is pot luck. I've pasted a few recipes for you below. Cheers.

**BLACK BEAN AND CHORIZO SOUP**

Servings: 8 servings

8 ounces Spanish chorizo, coarsely chopped (cubed)
2 medium onion, chopped
3 large garlic cloves, finely chopped
1 green bell pepper, chopped
? teaspoon dried hot red pepper flakes
1 teaspoon ground cumin
? teaspoon salt
4 tablespoons olive oil
Chopped jalape?os to taste
5 to 6 cups chicken stock
4 15 ounce cans black beans, rinsed and drained
Garnish: fresh chopped cilantro & sour cream

1)Cook chorizo, onion, garlic, bell pepper, pepper flakes, cumin and salt in oil in a large, heavy saucepan over moderate heat. Stirring until vegetables are softend, about 10 minutes.

2)Add broth, jalape?os and beans to simmer, partially covered for 15 minutes.

3)Lightly mash beans with potato masher to slightly thicken.

4)Can remain simmering for up to 2 hours.

5)Garnish with cilantro and sour cream and serve with homemade corn bread.


**Sue’s Italian Sausage & Tortellini Soup**


1 lb sweet Italian sausage, casings removed
1 cup chopped onion
2 large garlic cloves, chopped
5 cups beef stock or canned broth (I used low sodium organic boxed chicken broth)
2 cups chopped tomatoes (3/4lb)
1 8oz can tomato sauce
1 large zucchini, sliced (I used 4 small)
1 large carrot, thinly sliced
1 med. Size green bell pepper, diced
? cup dry red wine
2 TBSP dried basil
2 TBSP dried oregano
8-10 oz cheese tortellini

? Sauté sausage and transfer to bowl
? Sauté onion and garlic in 1 TBSP sausage dripping (I did this in a large stock pot and used olive oil instead)
? Return sausage to stock pot and add broth, tomatoes, tomato sauce, zucchini, carrot, bell pepper, wine, basil and oregano
? Simmer about 40 minutes…wait until good friends arrive ?
? Add tortellini to simmering sauce and cook about 8-10 minutes (until pasta is done)
? Sprinkle with parmesan cheese!


**LiLin’s Cornbread**
8 generous servings

1 cup butter
? cup sugar
4 eggs
? cup green chilis, diced
? cup canned creamed corn
? cup shredded cheddar cheese
1 cup flour
1 cup organic (grainy) cornmeal
2 tablespoon baking powder
1 teaspoon salt

Directions
1.Preheat oven @ 375 degrees
2.Cream butter and sugar together.
3.Add on egg at a time, mix well.
4.Add chilies, creamed corn, and cheese, mix well.
5.Add sifted ingredients, mix well.
6.Pour into prepared butter baking dish, cornbread pans or muffing tins (regular or mini).
7.Bake 1 hour.
8.Serve w/ honey butter.
9.Enjoy!

nothing. just make sure you tell everyone how much you liked their food and that your so glad you didnt make anything because your so full.

Thanksgiving foods.

Lasagna-- both meat and vegetarian kind. Its very filling and if you do a veggie option-- you will make everyone happy
