Olive Garden's Spinach and Artichoke Dip:
1 stick real butter
8 Oz Cream cheese
1 square package of frozen spinach microwaved according to directions and drained
1 12 oz. can of Artichoke hearts (not marinated or in oil)drained and chopped
1/2 C. grated (powder-y) parmesan cheese (NOT the fake Kraft stuff)
1 Tb chopped garlic
1 pinch cayenne
1 t. salt, or to taste

Mix all ingredients in a sauce pan. Heat until melted and bubbly. Sprinkle more parmesan cheese on top. Serve with crackers, toasted thin slices of baguette, bagel chips, bell peppers, and celery.

I'm using little bags of chocolates that are shaped like leaves. One at each place setting. I got them at Target.

WHITE CHOCOLATE COVERED PRETZELS

INGREDIENTS
6 (1 ounce) squares white chocolate
1 (15 ounce) package mini twist pretzels
1/4 cup red and green candy sprinkles

DIRECTIONS

Melt white chocolate in the top of a double boiler, stirring constantly.
Dip pretzel halfway into the white chocolate, completely covering half of the pretzel. Roll in topping if desired, and lay on wax paper.
Continue the process until all of the white chocolate is finished. Place in refrigerator for 15 minutes to harden. Store in airtight container.




CHOCOLATE COVERED CHERRIES

60 maraschino cherries with stems
3 tablespoons butter, softened
3 tablespoons corn syrup
2 cups sifted confectioners' sugar
1 pound chocolate confectioners' coating

DIRECTIONS

Drain cherries and set on paper towels to dry.
In a medium bowl, combine butter and corn syrup until smooth. Stir in confectioners' sugar and knead to form a dough. Chill to stiffen if necessary. Wrap each cherry in about 1 teaspoon of dough. Chill until firm.
Melt confectioners' coating in a heavy saucepan over low heat. Dip each cherry in by its stem, and place on waxed paper lined sheets. Chill until completely set. Store in an airtight container in a cool place. Best after 1 or 2 weeks.


ZESTY SNACK MIX

INGREDIENTS
4 cups Corn Chex? cereal
4 cups corn chips
1 cup salted peanuts
1 cup quick-cooking oats
1/3 cup butter, melted
3 tablespoons honey
4 teaspoons chili powder
1 teaspoon onion salt
1 teaspoon dried oregano

DIRECTIONS

In a large bowl, combine the cereal, corn chips, peanuts and oats. Combine butter and honey; drizzle over cereal mixture. Sprinkle with chili powder, salt and oregano; toss to coat.
Spread in a single layer in an ungreased 15-in. x 10-in. x 1-in. baking pan. Bake at 350 degrees F for 20-25 minutes, stirring once. Cool. Store in an airtight container.


CARAMEL CORN

INGREDIENTS
7 quarts plain popped popcorn
2 cups dry roasted peanuts
2 cups brown sugar
1/2 cup light corn syrup
1 teaspoon salt
1 cup margarine
1/2 teaspoon baking soda
1 teaspoon vanilla extract

DIRECTIONS

Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes. Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces. Allow to cool completely, then store in airtight containers or resealable bags.


BACON CHEESE BALL


INGREDIENTS
1 pound bacon
2 (8 ounce) packages cream cheese, softened
3 tablespoons mayonnaise
1 green onion, chopped
1 cup chopped pecans
1 box buttery crackers


DIRECTIONS

In a large skillet fry the bacon. Remove the bacon from the skillet and drain on paper towels. Chop or break the cooled bacon into small pieces.
In a medium-size mixing bowl, combine cream cheese, bacon, mayonnaise, and green onions. When mixed well, form 2 balls out of the mixture. Cover and refrigerate 3 to 4 hours, or overnight.
Before serving, roll the cheese balls in the chopped pecans.

Candles wrapped with a single wire trimmed ribbon is always nice (and helps decorate the table until the guests leave with them, so they serve a double purpose ;o))

You don;t say how formal this event is, or how many people, so how to package/present would very depending on these factors. The Dollar Tree has lots of really cheap, halfway decent baskets in different shapes and sizes-- I've even seen some that are tall and narrow like a vase, which would provide lots of volume without taking up alot of space on the table. Brandy snifters are another possiblity, esp. for a more formal event. Even if people don;t drink, they can use the glass later for small flower arrangements, matchbook or button collections, loose change catch-alls....
