the correct terms are hen obviously for the female and **** for the male, as regards quality the hen is much better because of the greater meat content in the breast, the **** has a much larger bone content especially in the breast area, for this reason you can usually buy **** birds much cheaper.for some "to me" obscure reason answers have delted the word c--k

A hen turkey is up to 16 pounds a tom turkey is 16.1 pounds and up. I just found this out when I was looking to buy one for this thanksgiving!!
