Help. Menu/Recipes for my Party?

I'm having a Casino night/house warming. The grill will be on with burgers and hot dogs. I want some additional appetizers/finger type foods. I'm looking for those simple but delicious recipes. Stuffed bellpeppers, the crockpot cheese mix, spinach artichoke dip or something. Anything I can prepare the day before and/or is really simple will be appreciated. I am a procrastinator and know the day of will be chaotic.


Answers:
Make or buy a veggie tray. Make Ranch dip, Buy a package of original buttermilk ranch and add 1 cup buttermilk and 1 cup mayo and mix well. Delicious with veggies, or cheese. Make day before so the flavors will "marry".

crockpot dip recipe:
Brown & drain 1 or 2 lbs. ground beef. Put in crockpot and add a can or two of rotel tomatoes depending on how much meat you make and velveeta cheese. Cook on low. Add jalapeno peppers to dip, or serve in a dish on the side. Good served with blue corn chips.

Baked Pimiento Cheese Spread

1? C. mayo
4 oz. jar diced drained pimientos
1 tsp. worcestershire
1 tsp. finely grated onion
1/4 tsp. red pepper
8 oz. block of extra sharp cheese, grated
8 oz. block of sharp cheese, grated

Mix together, spoon into greased 1? qt. baking dish. (I have an oval corning dish I've been using) as it makes quite a bit.

Bake 20 min on 350degrees.

Serve with cracker, celery sticks, broccoli, whatever.

Pan-Fried Onion Dip

2 large yellow onions
4 tablespoons unsalted butter
1/4 cup vegetable oil
1/4 teaspoon ground cayenne pepper
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
4 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup good mayonnaise

Cut the onions in half and then slice them into 1/8-inch thick half-rounds. (You will have about 3 cups of onions.) Heat the butter and oil in a large saute pan over medium heat. Add the onions, cayenne, salt, and pepper and saute for 10 minutes. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized. Allow the onions to cool.
Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer fitted with the paddle attachment and beat until smooth. Add the onions and mix well. Taste for seasonings. Serve w/ sturdy potao chips.

Spinach-Artichoke Dip

1 (10-oz) package frozen chopped spinach
2 (13 3/4-ounce) cans artichoke hearts
1/2 cup mayonnaise
1/2 cup sour cream
1 cup freshly grated Parmesan
1 cup grated pepper jack cheese

Preheat the oven to 350 degrees F. Grease a casserole dish with nonstick spray.

Heat the spinach in a microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor.

Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scrape into the prepared casserole dish and sprinkle the jack cheese on top.

Bake for 30 minutes. Transfer to a chafing dish and keep warm over a low flame. Serve with bagel chips.

Creamy Shrimp & Dill Puffs

1/3 cup whipped cream cheese
1/2 tsp Dill Weed, divided
1/4 tsp Ground Ginger
1 Tbsp. chopped green onions
1 can (8 oz) refrigerated crescent rolls
3/4 cup chopped precooked shrimp

1. Preheat oven to 375°F. Mix cream cheese, 1/4 teaspoon dill, and ginger in a small bowl. Stir in green onions. Set aside.
2. Unroll crescent dough; separate into 8 triangles. Cut each triangle in half to make 16 triangles. Stretch dough slightly and place crescent triangles into standard-size muffin pans so that the bottom of the muffin cup is covered and crescent corners are lying outside the cup.
3. Divide shrimp evenly into cups (about 1 heaping teaspoon per cup). Top each cup with 1/2 teaspoon of the cream cheese mixture. Loosely fold dough corners into center; pinch corners together and twist to seal tightly. Lightly sprinkle tops with remaining 1/4 teaspoon dill. Bake, uncovered, 15-17 minutes or until crisp and golden-brown.
Make-Ahead Tip: We recommend baking the day of serving, but if you prefer to make ahead, cover well and freeze unbaked puffs up to 1 week. Bake as directed above (do not thaw before baking).

Edna’s Armadillo Eggs

Mix together:
? lb. Owens Hot Sausage
? lb. shredded Monterey Jack cheese
1? cups Bisquick
And enough water to be able to pat these into little pancakes.

Seed a whole pickled jalapeno pepper and place a small piece of monterey jack cheese inside the pepper. Place stuffed jalapeno on top of a little pancake and close pancake to seal, forming into the shape of an egg.

Brush eggs with an egg wash (1 egg beat with 1 Tbsp. water). Bake in a slow oven (about 325oF) for 25-30 minutes. Serve warm or at room temperature.

I agree with "C'est Moi" just buy some frozen pop in the oven appetizers and pick up your dips at the same place. Costco really does have a decent supply. Talk about making your life easier, sit back, enjoy the party and new home, no one will be the wiser.

Nachos? A taco dip platter? A shrimp pizza dip platter? Bread bowl dips? Hummus?

Two things that have worked really well for me in the past -

Texas Cheese Dip & Cheesy Nut Spread

Texas Cheese Dip is made by crumbling and browning 1 lb. of hot breakfast sausage (I use Owen's Hot sausage). Drain after cooked and place in a crockpot. Next cube one box of Velveeta cheese over the sausage and then add a tiny bit of milk to thin the cheese down. Lastly add 1 can of chopped green chilies to the mix, and basically once the cheese is melted - it is ready to serve. Serve with chips or crackers. MEN LOVE THIS DIP!

Second - Cheesy Nut Spread. Super easy. Buy 1 pkg of Shredded cheddar cheese. To this add 1 jar of Real Bacon bits. Chopped 3 green onions (scallions) - tops and greens. Next add one small pkg of toasted sliced almonds. Mix this all up and then add just enough mayo to moisten it slightly. Chill.
Serve in a bowl surrounded with crackers. It is yummy!!!!! (this one can be made the day before, too)
